Eating Las Vegas isn’t too sure about José Andres’ Chinese/Mexican concept opening soon in the Cosmo, but is looking forward to a branch of Jaleo (if only to see if an absentee chef can bring the thunder like a stay-at-home one).

So, until those newbies prove themselves, there’s no improving on stay-at-home Julian Serrano’s top flight tapas…and there’s definitely no way to beat his de-contructed Mediterranean fish stew — a mélange (ELV loves him his mélanges), of fish and shellfish, artfully arranged and skirted by a fumet of fish, chile and chive oils that accent, without overwhelming, the pristine flavors of the sea.

It goes great with a salty Manzanilla or Fino sherry (or whatever white wine Desi Echavarrie suggests) and costs $14.

That’s right…$14 for a plate of impeccable piscatorial perfection.

    What the hey. I like to consider myself “adventurous”, so maybe I’ll try Jose Andres’ fusion joint after the holidays. (I’ll probably have to leave before Cosmo opens… Sigh.)

    And it’s good to hear Julian Serrano is still delivering the goods. I’ll also have to make another return visit there soon.

    That looks delicious. Didn’t make it to Julian Serrano while I was in town last week but maybe next time.
