Xingkai Deng Comes to BEIJING NOODLE #9

ELV feels something akin to pride and responsibility in Chef Xingkai Deng’s coming to Caesars Palace.

It seems the fellow on the left — Caesars Palace President Gary Selesner — first heard about Deng’s fabulous food at China MaMa from you-know-who, then went there many times to sample Deng’s superior dumplings, soups and stir-fries, and finally decided he had to have such a talented chef in his fold — if for no other reason to save him all those trips out Spring Mountain Road whenever he got hungry.

Deng is now at the stoves, along with the other talented chefs here, keeping both casino presidents and mere mortals happy with the best Chinese food you can get short of a Mandarin banquet:

  1. But what will Deng’s fabulous food cost now? At least twice China Mama’s prices?

  2. China Mama has gone though two chefs since he left. I was just in there and had the Kung Pao shrimp which I had many times under Chef Deng. What I was now served was startling. Gone are the Sichuan peppercorns (má là wèi xíng) and peanuts from the dish. When I questioned their absence I was told their presence was “Non-Traditional”. What I found on wikipedia was quite the opposite. :
