Bits, Bites, Bitings and Beginnings

ELV — the man, the myth, the Asian food maven — has been a bit under the weather recently. Actually, what he’s really been under is a number of dentist’s, dental hygienist’s, periodontist’s, and oral surgeon’s hands, as he’s struggled mightily to correct some malfunctioning molars in the back of his mouth.

And by “struggled mightily” we mean he’s been so full of novocaine, Xanax, diazepam, general anesthetics and Tramadol over the past ten days he barely knows his own name…much less what he’s chewing on.

China MaMa has settled comfortably into its skin of being our best Chinese restaurant, but that doesn’t prevent it from being the constant target of slurs and rumors along the lines of: “It’s not as good as it once was” or “No one goes there anymore, it’s too crowded.”

Xiao Long Bao for Beginners

Xiao Long Bao* or “little steamed basket dumplings” are more commonly called soup dumplings on this side of the Pacific. Their popularity has exploded ever since China MaMa opened its doors on South Jones, and took another great leap forward with Beijing Noodle #9‘s debut a couple of years ago. Amazingly, though, some folks have never been tutored in the proper way to enjoy them.
