New Restaurants Are Floating Our Boat + One That’s Already Sunk

Writing strictly about restaurants is no longer an obsession with us. This doesn’t mean we no longer prowl the streets of Las Vegas searching for good eats, but only that we’re not nearly as consumed by it as we once were.

We at #BeingJohnCurtas are now content to occasionally explore what’s new in local eats, but mostly, we retreat to the tried and true these days when it comes to dining out. After 25 years of this gig, we’ll leave the manic examination of our food scene to the erudite influencers and other excitable youngsters.

John Curtas can still get a boner, though, over the crispy authenticity of Ton Ton Katsuya, and his panties get moist over the mole taquitos at La Monjá.

Ton Ton is terrific — a must for lovers of the panko-crusted, high-heat, deep-fried pork cutlets and seafood that Japanese chefs do better than anyone.

La Monjá (The Nun) is the latest in Dan Krohmer’s quest for Vegas restaurant hegemony. It hit a rough patch right out of the gate after opening in September (both original chefs left/were shown the door), but the simple menu of ceviches, tacos, steak, shrimp, and enhanced Mexican street food tastes like a sure winner….and a welcome change of pace from all of the “elevated American gastropubs” at this end of Fremont Street.

While in one of his ever-rarer exploratory moods, Mr. Curtas recently ventured to Burnt Offerings. This excursion illustrates why he’d rather leave the intrepid examination of oddball eats to others — Burnt Offerings being by turns compelling and slightly weird.

The chef/owner — Jennifer Weiss Eckmann — has done a fine job updating a run-down Chinese joint on West Sahara into a presentable restaurant, but her Glatt Kosher menu is too ambitious by half.

Strict adherence to Jewish dietary laws means she also won’t be open on Friday and Saturday nights, and while we loved some things (her sauces and dips are a dream, so is her chicken-matzoh ball soup), we left shaking our heads over others (the barbecue beef needs work, and a lot more time on the smoke).

It is too late in John Curtas’s life for him to argue with people over arcane religious eating rules, so all he can do is wish Eckmann well, and try to get back some weeknight to suss out more Yiddish sustenance.

Another opening that has him all a-Twitter is Garagiste Wine Bar & Merchant (above) in the Arts District in downtown Las Vegas — the first true wine bar to open in like….forever. Owners Mario Enriquez and Eric Prato are Strip veterans and have sunk their savings (and considerable expertise) into an operation unlike anything  Vegas has ever seen.

This is not some suburban supermarket wine sipping stop (a la Grape Street or Local), this is the real, big city deal — the type of wine bar gaining currency from Los Angeles to New York — featuring a highly curated list of exotic grape juice from some of the most interesting wineries in the world.

With everything from JL Chave to noteworthy Nebbiolo to natural wines, Garagiste (the name refers to small-batch, exclusive, Right Bank Bordeaux wineries) is banking on a growing Millenial thirst for great grapes to take hold here, and the early returns (and crowds) have been encouraging.

Those looking for Sonoma chardonnays like they discovered during some insipid California foray should stay in Summerlin.

On the buzzkill front, word came down yesterday that bBd’s in the Palace Station Hotel and Casino will be closing next week. Those who follow us know what huge fans we are of Ralph Perrazzo and his meat machinations. bBd’s had quite simply the best burgers in town.

It also had an incredible beer program featuring obscure artisanal brews from all over the globe. The meat was ground in-house, and the steaks were a steal, equaling anything you can find a mile to the east at a 20% discount.

So what went wrong? Plenty. Like many a chef before him, Ralph was seduced by clueless hotel F&B honchos. We’re sure they sang him a sweet song about all of the fabulous upgrades and renovations which were going to set a whole new paradigm for the Palace Station — the ultimate low-rent, smelly ashtray, god’s waiting room, grind joint.

Yes, they built a bunch of new rooms, threw in a movie theater, and expanded one side of the depressing casino to accommodate some new food options, but what they didn’t/couldn’t do is change the clientele.  Or the reputation.

Everyone from Lake Mead to Los Angeles knows what the Palace Station is: an old people hotel. Hell, it was our dad’s favorite whenever he came to Vegas….and he loved coming to Vegas.

Anthony John Curtas (1926-2006) loved the Palace Station (formerly the Bingo Palace), because he was in his element. But he is gone now, and even as he as his contemporaries have died off, their favorite hotel is burdened with their legacy of dropping all those coins into all those slots for all those decades. Trying to upgrade the PS is like trying to make horseshoes hip.

The other problem with bBd’s was its size. The bar was the length of a football field and it was too big by at least 100 seats. And the name and the logo also stunk (sorry, Ralph). bBd’s had about as much chance for success as John Curtas in a triathlon.

We ate there about ten times in the year it was open. And we’ll dream about Perrazzo’s steamed cheeseburger until he finds another (smaller, more locals-friendly) place to bring his boffo beef.

The past year John Curtas has snuck into bBd’s multiple times for lunch and dinner, eating his way through our menu spending his own money. In NY, food writers and reviewers for a publication don’t get a comp number or want to be taken care of for some marketing material. Their experience as a regular guest is what is looked upon, a true test to what the place is not by one visit but multiple. Hate him or love him, I completely respect his way of reviewing a place even if we were not in this book of great places in Las Vegas.

Going on 25 years in this business Yelp, FB, etc has put a serious change on how we operate. Restaurant owners and chefs appreciate the food bloggers & legitimate food reviewers more than ever. I look forward to doing more in LV and sharing that with all the people who have been nothing but supportive of my heart & soul that is bBd’s that was started in NY.

We have some big news coming out soon and can’t thank the team at bBd’s enough for pushing. I say it all the time you are only as good as your team and your relationships with the product that comes in the back door. This business is a professional sport that comes with many obstacles and adjustments and you must be Michael Jordan. Thank you Mr. Curtas

TATSUJIN X

Anyone who knows me knows I’m nuts about Japanese food. I was crazy about it for years (decades really) before I actually went to Japan.

For me, going to Japan was like having sex for the first time — something I thought about, read about, and fantasized about before it really happened. Then, once I went, I realized what I’d been missing. And like a love-struck teenager, all I could do was fantasize about doing it again.

It was in Tokyo when I realized that eating Japanese food in America was really nothing more than foreplay — most Japanese food here being but a teasing, pornographic representation of the real thing. The real deal envelopes you, transports you, titillates the senses and pleases the palate in ways that get lost once the recipes travel across the Pacific. (A country obsessed with fresh fish and umami will do that to you.)

But as with many things edible and Asian, things have improved immeasurably over the last decade. Our finest Japanese places — Kabuto, Yui Edomae Sushi, Raku, Kaiseki Yuzu, Monta, et al — do a fine job of recreating the food of their homeland. Thanks to an influx of dedicated chefs (and the wonders of air freight), faithful re-creations of noodle parlors and intimate sushi bars are now in our backyard. The fact that many of them are tucked away in odd locations only adds to their verisimilitude.

(A good rule of thumb when looking for the genuine article in Japanese food is to look for any Japanese word in the title of the restaurant. ( Korean-owned “Japanese” restaurants usually just slap the word “sushi” up there, knowing everyone will come for their California rolls.) Any nebulous Nippon nomenclature generally is a good sign, even if it tells you nothing. Because when it comes to most things Japanese, the more obscure something is, the better. )

And it doesn’t get much more obscure than Tatsujin X.

(Poetry on a teppan)

Stuck in the middle of an old strip mall in the shadow of the Palms Hotel, Tatsujin X (the name means “master”) is the most recent addition to our expanding catalogue of authentic Asian eats, and might be the last word in nondescript eateries. Only the noren cloth awning out front gives you a hint that something strange and wonderful lies within. As in Japan, the signage tells you nothing but the name.

Those in the know will discern its name to denote the teppanyaki cooking of Japan — the flat, steel griddle (teppan) upon which various foodstuffs are grilled, broiled or pan-fried (yaki). Call it a teppan or plancha or good old frying pan, what you get is food prepared on a hot, smooth metal surface upon which a dexterous chef can work wonders.

The showier aspects of this food gave rise to the post-WWII Japanese steak house craze, where knives got thrown and food got flamed, all to the oohs and ahhs of prom dates everywhere. But crowd-pleasing this place is not.  Tatsujin is to your average “Japanese steakhouse” what Jiro Dreams of Sushi is to Beer Fest.

Think of Tatsujin as Benihana with a PhD.

What Grand Chef Yoshinori Nakazawa aims for at this bare-spare 13 seat counter is not the applause of wet-behind-the-ears teens or well-lubricated tourists. He is shooting for appreciation on a deeper level: the sort of gratitude bestowed by black belt epicureans who know the right stuff when they taste it. And what they taste is an 8-course meal like nothing in Vegas.

You have to go to a Shinjuku alleyway to find food this good, starting with a “chef’s choice” platter (above) of a crispy sawagani crab  flanked by a bright salmon tartare, spicy edamame beans, a soy salad and meltingly tender strips of barely-grilled rib eye. All of it sets you up for a well-paced courses to come, from a sparkling wakame (seaweed) salad, to a dashimaki-tamago omelette gently wrapped around strands of king crab and oozing sea urchin. If there’s a bigger umami-bomb in town than this egg concoction, I’ve yet to find it.

As you’re swooning from the seafood omelette with its cross-hatching of mayo and sweet ponzu sauce, you’ll notice the seafood star of the show: a Brobdingnagian oyster the size of a filet mignon. It is designed to intimidate the most ardent ‘erster eater (me), and it does.

These five-year old beauts come from Washington State, and are not meant to be slurped, but instead, they are meant to be grilled and sliced…the better to see and taste all that fleshy bivalve muscle and those oyster innards. (There’s no way around it: what you see and eat are the oyster’s intestines. The good news is the only thing they’re filled with is algae and other microscopic sea veggies.)

Before you get to that big boy, however, you’ll first be served a hot, oily broth containing big, meaty chunks of clams. One of my dining companions called it a clammy bagna cauda, which pretty much summed it up. Both of these sweet bivalves will have seafood lovers in hog heaven. Less adventuresome types should take their favorite intrepid foodie friend along to share what they can’t handle.

From there you’ll move on to simple, teppan-grilled vegetables which act as an intermezzo to the proteins.

Three steaks are offered (fillet, rib eye, strip), with a forth of imported Japanese wagyu for a $35 surcharge). Sea bass (excellent), salmon (good) are a bone thrown to non-meat eaters. Both are perfectly fine pieces of fish, well-handled and cooked, but they sort of miss the point of the joint. The steaks are the stars here, and they are lightly seasoned and gently cooked as perfectly as beef can be. There’s no denying the melt-in-your-mouth appeal of the expensive wagyu, but my Japanese friends profess to like the denser, beefy quality of the American “Kobe” better. Either way, the cuts are seared to a level of subtle succulence you don’t achieve with the pyrotechnics of charcoal grilling.

There probably should be a chicken option too, but as soon as Nakazawa starts trying to please everyone, this place will lose the vibe that makes it so special. The specialness comes from remaining true to the single set, coursed-out meals that defines many small restaurants in the Land of the Rising Sun. Japan is not a “something for everyone” culture — not eating-wise anyway. Restaurants do what they do well, and you’re expected to value them for their individual styles of cooking, not demand that you want something “your way.” This is going to be a challenge for Tatsujin as it moves forward.

However you like it, there’s no way to improve upon the final savory course. Choose either a thick, pork-filled okonomi-yaki pancake (above), or garlic rice. Both will have you dropping your chopsticks in awe. The pancake, served with waving katsuobushi (bonito) flakes dancing atop it, would almost be a meal unto itself somewhere else, and the garlic rice is a testament to great food coming in deceptively simple packages. It’s not much to look at, but soothing-sweet-nutty garlic permeates every bite of the sushi-quality grains. This is a grown-up rice dish for connoisseurs of starch.

Desserts are three in number and very Japanese. If you’re very Japanese, you will love them. If you’re not, stick to the ice cream.

To recap: Tatsujin is basically a fixed-price, fixed-meal steakhouse. (In Asia they call these fixed-course meals “sets.”) You pay one price (from $50-$70) and you receive eight dishes, four of which give you some choice (salad, protein, and whether you want the pancake or the rice, and dessert). It is not a menu for picky eaters; nor is it a place to take someone who demands to know whether they will “like something” before they order it. The whole idea behind teppanyaki restaurants is to sit down, enjoy the show and let the chefs work their magic.

Sitting at the bar watching the chefs work, I felt like I did in January, 2008, at the early days of Raku. Then, I was watching the birth of a new kind of restaurant — one that plugged into a new, sophisticated zeitgeist of budding internet gastronauts learning about Japanese food. Will Tatsujin be the next Raku (albeit with a much more limited palette)? Or will it be another Omae (remember it?) — a genre-bending, ultimately unsuccessful attempt to broaden Las Vegas’s Japanese food cred?

Only time will tell, but we are a much more knowledgeable food community now than we were ten years ago. Our Japanese food scene has also increased exponentially since then. The time would seem to be right for us to embrace this sort of cooking in this sort of restaurant. Tatsujin is now our most unique Japanese restaurant and steakhouse, and it is certainly the closest you can get to Tokyo without flying there.

(The prices above do not include beverages, but as of this writing only water, tea and some soft drinks are offered. You can BYOB but they ask that you tactfully hand your covered bottles to the staff upon entering, and they will pour your (beer, sake, wine) from the kitchen into ceramic cups as you request. For the quality of the meat and the cooking and the show, and all the attendant dishes, this place has to be considered the best steak deal in town. One of our meals was comped, the other, with the Japanese wagyu surcharge, came to $225/two, including a $50 tip.)

Can CLEAVER Cut It?

I like everything about Cleaver except the food.

This is a good omen.

Because über-bartender/award-winning cocktail maven Nectaly Mendoza owns it.

And the last Mendoza restaurant whose food I hated (Herbs & Rye), turned out to be a big hit.

I’m not going to go on and on about its menu miscues (in one of my 1000+ word articles with a bunch of pictures), but I will point out a few things. So here goes:

Cleaver has an ambitious name and a very ambitious location (directly across the street from a Del Frisco’s Double Eagle Steakhouse), and it has a cool, comfortable decor with a long, capacious bar and comfortable booths bathed in a soft, flattering light that makes everyone look good and a noise level conducive to enjoying good drinks and conversation, not to mention tucking into steaks and sides straight from an old school steakhouse’s playbook, which seems like a really good idea until you realize this place has been death to several other steakhouses that all thought they could make a go of it with the same template and each failed miserably within a year, even though they didn’t have this joint’s pedigree or ambition, which might be enough to bring a big industry crowd in, but  which won’t be enough to keep this place afloat because it needs to chip off a bunch of conventioneers to make a go of it and to do that you need to have food and wine and drinks that compete with our top (and even 2nd tier) steakhouses (like Del Frisco’s), and from what I’ve tasted in two dinners here the steaks are worthy but the side dishes — from almost uncooked Brussels sprouts to grainy-bland cheese sauce to dusty-tasting calamari to an atrocious steak tartare — won’t do anything to turn anyone’s head from a more well-known venue, none of which bodes well for Cleaver’s chances if they can’t find a way to turn out at least B- side dishes to compliment their B+ to A- beef.

They also don’t know how to make a Bearnaise sauce to save their life, which is pretty much a cardinal sin in the steakhouse world. And the carpaccio won’t have anyone forgetting Harry’s Bar, either.

None of this comes cheap. The sort of neighborhood budget-steakhouse vibe that packs them in at Herbs & Rye won’t cut it a half a mile from the Strip — not in the $60 steak arena, and not with the stiff competition Cleaver is facing.

But like I said, the design is super-groovy (dominated by faux-military framed paintings of Chris Farley, Martha Stewart, Eddie Murphy and their ilk), and the service is great and the bartenders are skillful. I even love that they do a Kansas City strip here — a bone-in cut I thought had gone the way of tournedos Rossini — and they know how to season and sear it.

But if they don’t get their act together with the rest of the menu, this place is going to go the way of Mr. Farley.

There, I said it.
