ELV has been in The Cosmo every day since it opened. Unfortunately, even though we’ve been plowing our way through almost every venue (with many a spectacular result), we’ve been unable to secure a seat at José Andrés’ multi-cultural mecca for curious, bi-continental cuisine-ists.
So you’ll just have to settle for some groovy snaps of China Poblano‘s über-cool design until we can tell you how it tastes.

Eating Las Vegas isn’t too sure about José Andres’ Chinese/Mexican concept opening soon in the Cosmo, but is looking forward to a branch of Jaleo (if only to see if an absentee chef can bring the thunder like a stay-at-home one).

ELV has learned that local restaurateurs Block 16 — the folks behind LBS Burger Joint at the Red Rock Casino are bringing another ground beef concept to the Cosmopolitan Hotel and Casino, when it opens on December 15.
Called Holstein, Chef Anthony Meidenbauer promises us the concepts will be new, the ingredients all-natural, ultra-fresh and organic, and in his words, there will be an emphasis “…(on) better burgers and (bringing) a funky, homegrown attitude to The Strip.”
