Late-Stage Las Vegas + The List

Writers take their muses wherever they find them. The inspiration for this post came from James Reza — longtime Las Vegan, once my editor; now a thoughtful observer of all things Vegas — in a tweet about the possibility of the Oakland Athletics moving to town:

Which got me to thinking about “late-stage” culinary Las Vegas.

Just where are we now? And what do we have to look forward to?

The Strip — long the economic and creative engine of all things gastronomic in town — has faded into a hangout for Martha Stewart fans and Voltaggio Brothers cash grabs. (For what is a “one-year year culinary residency” but a way to monetize an  unusable space (the two-story vacated Aureole cavern) with the unimaginative (“Retro”) from the unimpressive (who?). We couldn’t be less interested if they were serving spaghetti Os and fake Parmesan, which, of course, they will be.

These places will make money of course, but they won’t leave a mark. Swapping an Old Navy for a Gap in a tired old mall is not the same as bringing Neiman-Marcus and Nordstrom’s to town in the first place.

“I am so done with the Strip,” exclaimed another muse for this article. The speaker of those words wasn’t some local jamoke who hates being charged for parking. He has been a fixture on Las Vegas Boulevard South for decades — opening multiple restaurants in hotels going back to the Nineties. Now he envisions a future for his company opening smaller venues for locals who appreciate them — something unthinkable a decade ago.

Strip-quality food coming to neighborhoods is nothing new: You can trace its roots from Other Mama’s premium seafood to our upscale sushi parlors and to the prime cuts now available at 138 Degrees (Henderson) and Harlo (Summerlin). With this quality comes Strip-level pricing, but from where we’re sitting, no one in the carriage trade seems to be balking at $100/pp check minimums.

Chinatown (where a 75 seat restaurant is considered huge) continues to explode, while the southwest seems to be attracting chefs and concepts like eggs to Bearnaise.

All of which bodes well for locals, and marginalizes whatever is happening on the Strip, at least for those of us who used to be in awe of the restaurant revolution that took place there for twenty years.

Will we trundle up to Caesars to see the new Peter Luger when it opens? Sure, if only to compare it to the New York original. (If things run true to form, the menu will be laughably short, the wine list absurdly brief, and the staff comically rude.)

But Luger and the Voltaggios and even Martha Stewart — the octogenarian queen of brand-whoring — pretty much signal that the celebrity chef restaurant has run its course. And if they weren’t enough to convince me, then septuagenarian Martin Yan’s bad joke of a licensing deal should do the trick…and demonstrates how deeply we are scraping the bottom of the celebrity chef barrel.

You probably have to be over fifty to remember Yan from his  “Yan Can Cook” PBS days. Perhaps once he could, but no longer. Now he’s prostituting his brand like a pint-sized Martha Stewart, keeping accountants happy and his rice bowl full at our expense. I doubt any of the low-rollers in this charm-free dining space even know who Yan was, except in a “this guy used to be famous” kind of way. Regardless, he’s been reduced to going through the motions to cash in on a faded name and the cynicism behind the whole enterprise is palpable.

As an official old-timer, it is easy to get depressed about the direction in which Vegas is heading. F1! NFL! Super Bowls and Baseball! Late-stage Vegas has morphed before our eyes from a town of gambling, food, and music into the mega-event capital of America. Las Vegas used to be about wicked fun and excess….then it was food and shopping. Its future will be all about advertising.

The idea of a big hotel opening with a lounge and a showroom and six good restaurants now seems as quaint as a flip phone.  Old time casino table games don’t count anymore, anymore than washed up brands still trying to cash in.

Perhaps the Fountainebleau will kick start a new dawn in Vegas dining. Hope springs eternal. And there are still many, many legacy restaurants occupying a special place in our hearts (Milos, Jaleo, Robuchon, Delmonico, Savoy, Bazaar Meat…) plus a few new ones which rate a return (Balla, Viva!, Brezza….)…but lord help me if I ever step foot in The Horseshoe again. (True fact: You can put lipstick on a pig and it will always be Bally’s.)

Soooo….long story short, after the Yan disaster, I needed a series of superb experiences to inspire me to post yet another promiscuous purview of my palate pursuits….so here it is, for the umpteenth time in a row, THE LIST: the places in Las Vegas you should be eating in and why. Put another way: the places I’ve been eating and why they give me hope for the future of Las Vegas.

As usual, all venues come highly recommended unless otherwise noted:

1228 Main

How can we be so jazzed about a restaurant before it opens? Easy peasy when it has the pedigree of this one. The folks who brought you Spago, CUT, Lupo, et al are about to change the downtown game in ways unimaginable a half-decade ago: three meals a day; an on premise bakery; world-class desserts; Cal-Ital-French menu (like the one that made Wolfgang Puck famous); remarkable coffee; casual lunches and serious dinners — this will be like nothing Main Street has ever seen.

To be clear: This is not a Wolfgang Puck restaurant, but he is an investor, and his major league kitchen talent is behind the project. We expect this rising tide to raise all boats, and finally turn Main Street into the dining destination it was destined to become. (East Fremont must be watching and weeping.)

Opening at the end of the month. Now if we could only remember the address…

Further good news arrived in the form of Bradley Ogden’s ongoing overhaul of Marché Bacchus‘s kitchen, and a single bite of his steakburger gave me hope for the future:

Bouchon is still the place to go for vichyssoise, boudin blanc and Le Cirque-worthy crème brûlée:

…not to mention sweetbreads. Bouchon is also the only place we know of in Vegas, with the cojones to serve them. You know these glands gotta be good if we head there directly after spending two weeks in France. In business almost twenty years now, Bouchon has endured because its food is….wait for it…thymus:

Caveat: As much as we love the Big B, its ‘ersters were unimpressive, in size and selection. We’ve always called them best in town, but that crown has been usurped by another slurper — Water Grill — where even late in the season, the bivalves were clearly bigger, better, and fresher:

Since we’re in a seafood mood, when the hankerin’ for fish and chips arises, the malt-battered ones at 7th & Carson are coronation-worthy:

And don’t sleep on the incroyable desserts at Osteria Fiorella:

As long as we’re remembering superior succulence over the past three monts, this “Secreto Pork” at Edo Gastro Tapas & Wine stands out:

…as do the life-affirming/health-giving properties of Khoury’s Mediterranean practically perfect puffy pita:

Naxos Taverna restored my faith in off-Strip casino eating …by bringing Milos-quality seafood to the ‘burbs. Gorgeous swimmers, pretty room, beautiful apps, and finally, a restaurant with a chef (Mark Andelbradt) who knows how to cook a f**king artichoke:

The restorative powers of Szechuan cuisine are well known, but be advised: at Chengdu Taste , they must be sampled with a fire hose in tow:

When it comes to breakfast, The Daily Bread stands apart. It’s fresh-baked goods are shockingly good, and this banana cream croissant was the definition of scrumptious:

Did someone say “Conchinita Pibil?”After three weeks in France, the one thing we craved was the spark of good Mexican, and Leticia’s Cocina & Cantina always fills the bill.

Speaking of sparks, the contrast of rich and sharp is the elemental appeal of good Thai, and Lamoon had us over the moon with its comfy build-out (in an old Dairy Queen!) and a luscious duck khao soi:

Everything we tried was a head-turner, both in presentation and taste. Just the palate resuscitator we needed after weeks of organ meats and stinky cheeses. Nice wine list, too, as befits the Bank and Bon Atcharawan brand.

In a more traditional vein, we returned to Cipriani for the pasta, but stayed for the gelato:

One of the ways we keep our girlish figure is by walking to Cipriani for lunch on Fridays. This is not an option at  Hola Mexican Cocina+Cantina  which serves these fabulous blue corn grilled fish tacos at the far reaches of the southwest valley:

Truth be truth, Hola is so far from the palatial Curtas abode:

…that it took a Sherpa guide, Two Conestoga wagons, and a degree in dead reckoning to find it. But the payoff was in those tortillas and even the spicy fideo — which got our attention more than any Mexican side dish in recent memory.

Closer to home is Patrick Munster’s brilliant steak tartare at Main Street Provisions:

Yes, that’s two mentions of Oscar Amador Edo’s food…which, as our hottest local chef running two of our hottest restaurants, he deserves.

Now, for the home stretch, some old reliables and newcomers which rang our chimes over the past few months:

Yukon Pizza is simply fabulous no matter how you slice it:

Sea Salt Live Sashimi …is delicious, but not as pristine as Japanese, and definitely not for the squeamish. Pro tip: bring your favorite Korean to help you navigate the menu which is not exactly limited:

All of these meals restored my faith in humanity….at least as it relates to my taste buds. They also got me to thinking…

What will late-stage Vegas be? I expect the Strip to get dumber and locals to get smarter. Chef-driven restaurants are so 2010. “Name” chefs are gradually being replaced with corporate restaurant concepts like the ones that brought Tao, RPM, and Mott 32 to our shores(?). Next up will be the LPM Restaurants bringing “music, art, people and bonhomie [and] outrageous harmony in the room” — when it takes over the old Milos space in The Cosmo. More and more, new joints will prioritize a party vibe over the food, and the sports-loving crowds will eat it up. The restaurant-cum-nightclub is here to stay, and will make me long for the days when I thought the music at B&B Ristorante was a little too loud.

The Strip hotels once aimed high and hit their target, and brought world renown to our restaurant scene in the process. But the visionaries who changed that game are long gone, replaced by executives who view Vegas as one gigantic advertising platform masquerading as a sports bar, shoveling $100 steaks into the gaping maws of fanboys and show-offs.

With this change went any hope that the Strip’s restaurant scene will ever again be taken seriously, at least in my lifetime. It’s no coincidence that we have three finalists for James Beard Award this year and each of them — Oscar Amador Edo, Kaoru Azuechi, and Garagiste Wine Bar — plies their trade miles from Las Vegas Boulevard.

And miles from LVBlvd is where, with a few exceptions, you’ll find me these days. Because if there’s one thing I don’t want with my meals, it’s “music, art and outrageous harmony.”

The List 2021 – Vegas on the Rebound

These are the times that try men’s appetites.

And by “try men’s appetites” I mean tempt them unmercifully.

After the trying times of 2020, it seems like nothing but sunshine and rainbows in our culinary world these days. With venue after venue opening (or reopening) to eager mouths and hungry souls.

Downtown is exploding (in a good way), the Strip is awakening like a slumbering giant (or an unstuck freighter?), and the ‘burbs are getting better than ever. Even Tivoli Village has become a destination.

Circa has pumped new life into Fremont Street; Oscar’s now serves the best cheeseburger in town, and we’ve even found a brunch we don’t hate. (High praise indeed!)

For grins and giggles we’ve decided this year to officially keep count of every restaurant in which we eat. In years past we never kept a running total, but generally we averaged around 500/year…for 20+ years.

Covid put an end to that streak — turning us into a soporific shell of our former self.  A somnambulant supper slacker, if you will.

But things have turned around in a big way: It took us all of 2020 to make it to 100 restaurants. This year we did it in a little more than three months.

These are thumbnails of where we’ve been, and why we think you should go there. They are mere sketches, pithy positive platitudes of pontification for your palate’s pleasure, and probably as paired down and word-penurious as our prolific personality can parse.

In other words, they’re short and upbeat and we’ve tried to keep the negativity in check.

And like we at #BeingJohnCurtas always say: you get what you pay for on this website.

So, without further ado, here it is….

THE HEAVYWEIGHTS

Bazaar Meat

It’s been almost a decade since I steaked out the great meat emporiums of the Big Apple, but I’d bet my sweet tenderloin none of them can hold a candle to this pinnacle of prime.

Cipriani

Almost every Friday you’ll find me here at lunch. When someone else puts out a midday repast this elegant, you’ll find me there, too.

Costa di Mare

As stunning as ever. As expensive as ever. Our splashiest seafood venue is worth a splurge, so don’t complain about the soaking. (You get what you pay for, and ingredients this good, and cooking this precise, are both trés chere. Ivo Angelov, Mark LoRusso and Daniela Santos have this place tuned tauter than the mizzenmast on a ship-of-the-line.

CUT

There are two great steakhouses in Las Vegas and this is one of them. The quality of the meat between CUT and Bazaar is a toss-up (although they source their beef from different purveyors with different philosophies), but on any given night I’d give CUT the edge for the restless inventiveness of Matthew Hurley’s cooking.

Edge Steakhouse

A real sleeper in the Westgate Hotel. Neither the hotel nor the Yelper clientele quite seem aware of just how great Steve Young’s food is, but if I were forced to rate Vegas steakhouses right now, it would be a strong #3.

Estiatorio Milos

The best Greek restaurant in Las Vegas that isn’t Elia Authentic Greek Taverna. Simply incredible seafood in a stunning new location.

Kaiseki Yuzu

Japanese food so authentic you’ll want to start acting like Toshiro Mifune.

Oscar’s Steakhouse –

NEW KIDS ON THE BLOCK

Ada’s Wine Bar –

Eclectic list; small menu; fabulous food  by Jackson Stamper; al fresco setting. So good I’ll even brave the depressing empty-ugliness of Tivoli Village to go there.

Big Dan’s Chinese Noodles –

Inside the SF Market on Spring Mountain Road are Biangbiang noodles so good they’ll scare the Shaanxi into you.

Barry’s Prime Steakhouse –

Barry’s will forever be a war with itself over whether it wants to be a serious steakhouse or a hangout for the rich and beautiful. Celebrities and good food go together like hockey and high tea, but if that’s the way they want to market themselves, who am I to argue?

Burgundy Cafe & Bakery –

Our French bakery scene is starting to resemble the Left Bank. To Cafe Breizh, Delices Gourmands, and the newly opened Le Cafe Du Vegas, you can add this gem on West Sahara, built from the floor boards to the mille feuille by Chef Florent Cheveau. Straight outta Paris it is, with pastries so Parisian they ought to come with a mime and an organ grinder.

D’Agostino’s –

Donny Thompson’s makeover of Cafe Chloe is still in mid-stream — waiting for the old regulars to either die off or seek their pre-chewed pasta at some other insipid Italian. There’s lots to love here (Tablecloths! Better wines! True Bolognese!), but also some red sauce holdovers on the menu which are best forgotten. Let Brandi guide you and you’ll eat damn well…especially if you start with the antipasto salad.

8East –

Fremont Street’s most fascinating food. Asian-fusion filtered through Dan Coughlin’s American-Thai sensibilities. Open for lunch and dinner. So good it ought to be featured on the Circa Hotel marquee. Get the appetizers — all of them — and that picanha steak (above). On second thought, get the whole menu…except the lobster fried rice. It’s good but not worth the tariff.

Good Pie –

Too many pizzas! That’s what I complain to Vincent Rotolo about: his menu is too damn big. Too many toppings. Too many crusts. Too many options. On the other hand, we have yet to have a bad bite here so I should probably just keep my (pizza) pie hole shut.

Johnny C’s Diner –

A real, old-fashioned diner, tweaked with just enough cheffy accents to keep the snobs satisfied. Avocado toast may be to savories what cupcakes are to sweets, but Johnny Church’s version is to others what a symphony is to a square dance.

Letty’s –

The best tacos downtown. Don’t even think of arguing with me about this.

Main Street Provisions –

They took the ham steak off the menu, and for this I can never forgive them. But they kept the polenta hummus, gonzo babaganoush, the fry bread and the best veggies this side of Sparrow + Wolf, so all is forgiven. P.S. We love the short wine list and the cocktails too.

Osteria Fiorella –

Three previous Italians in this space have all fallen flatter than stale focaccia. Marc Vetri’s troops made it a raging success right out of the chute. I actually enjoyed my brunch there, even if the whole time I was dreaming about dinner.

Pizza Forte –

Mimmo Ferraro is casting pearls before swine by bringing legitimate, big city pizza to unworthy college kids at UNLV who probably think Little Caesars is an upgrade from Domino’s. They won’t appreciate his cheesy, crusty, New York-inspired pies. But we do, Mimmo, we do.

Rainbow Kitchen –

Holy har gow, Batman! The dim sum here is spectacular! And a dumpling or three above its competition. This place had the misfortune to open one month before Covid hit (late January last year), and had been limping along since last summer. Now that restrictions have loosened, it has become Number 1 on every shu mai researcher’s list. A well-heeled Chinese clientele has taken to it like hoisin to spare ribs. Killer deals on Dungeness crabs (above) and lobsters, too. Very Cantonese, but also quite welcoming to gwailo. No carts, you order off a menu, much as you do in the nicer dim sum palaces of Hong Kong. “All of our food stays fresher that way,” says owner Bill Chiang, and he’s right.

Robata En –

Ramir de Castro returns! Bringing his unique brand of Japanese fusion to Spring Mountain Road. Like many of the newbies on this list, he’s had a brutal go of it for the past year, waiting to open, then opening with all kinds of restrictions. If you liked him at Yonaka (where he first made his mark), you’ll love his updated takes on tsukune, kaarage and such. I was always puzzled about why Yonaka threw in the towel after an awesome start, loyal fan base, and plenty of publicity, but whatever the reason, he’s back and Chinatown is richer for it.

Saginaw’s –

Sex is great, but have you tried “Derek’s Favorite” roast beef and salami sandwich?

YUGA KOREAN –

A pleasant surprise right next door to the Village Theaters on West Sahara. Friendly service. Easy to love Korean ‘cue.

Yu-Or-Mi Sushi –

Is it top-drawer, drop-your-chopsticks sushi of the Kame, YUI, or Kabuto persuasion? No, but it’s a damn site better than most neighborhood spots, with some interesting sakes and Japanese beers.

OLD RELIABLES

China Mama –

Our best Chinese restaurant. Period.

DE Thai Kitchen –

Small but mighty. Small but incendiary menu. The Kua Gling (spicy southern Thai dry curry) separates the men from the boys in the Thai spice brigade.

E-jo Korean –

It had been ages since we ate here. One of the first Korean restaurant locations in town that’s still going strong. (Back in the day, there were several in Commercial Center, but all have gone to that great banchan in the sky.) Modest but satisfying, and filled with fellow Korean travelers chattering away in their native tongue the day we visited.

Elia Authentic Greek Taverna –

Jammed every night it’s open, with good reason. Beautiful Greek food even my yia yia would approve of.

Ferraro’s –

Former Chef of the Year Francesco di Caudo was a Covid casualty — which tells me means they’re going back to basics at our oldest and best Italian. But the basics here have always been solid, and the wine list remains an Ital oenophile’s dream come true — now with some beautiful discounts on some of its best bottles.

Kung Fu Thai-Chinese –

There is something delightfully old school about this institution on Valley View at Spring Mountain Road. Most of it is standard issue, but sometimes a body just wants to getta big dish of beef chow mein.

Los Antojos –

Hadn’t been in almost a decade, even though it was in the early editions of EATING LAS VEGAS – The 50 Essential Restaurant (Max Jacobson was a huge fan). I was alone. Ordered a couple of things. Sat down. Removed the mask; fiddled with the phone. Within minutes the manager came over, dropped his mask to reveal and ear-to-ear grin and shook my hand. Then he pointed to various notices, articles, and awards on the wall (from Saveur magazine to Food Network) and thanked me for all the national recognition they received after our first book came out in 2010. Made my fucking day. P.S. The food is still great (as it has been since 1995), at this ultimate Mexican hole-in-the-wall.

Nakamura-Ya –

Japan goes Italian with some creamy, seafood-packed pastas. The real deal that’s also a real deal.

Ohlala French Bistro –

French resilience should never be underestimated. Another mainstay that came through Covid smelling like a rosé.

Orchid’s Garden –

Not the best dim sum by a long shot, but a lot better than it used to be.

Partage –

The Three Musketeers — Vincent, Yuri and Nicolas — have created a following for all things French….in the middle of Chinatown. Their new wine store venture — French Cellar by Partage — has quickly become the in-spot for Burgundian imbibing.  Incroyable!

PublicUs –

This place is so crowded nobody goes there anymore.

The Black Sheep –

Jamie Tran is on this season’s Top Chef. Go Jamie Go! And go you should to hear neighborhood powerhouse that’s soon to be one tough ticket, until she expands, which we hope happens soon.

7th & Carson –

The Irish breakfast is worth a trip all by itself.

Sparrow + Wolf –

Brian Howard’s seasonal menus are things of beauty. Blink and you’ll miss them. Therefore, we suggest you hit S+W seasonally, if not more often, if you want to thoroughly examine what our most restless chef is rustling up.

Windy City Dogs –

A thing of beauty.

The Italian beef didn’t wow us; the Chicago dogs did.

Yi Mei Champion Deli –

Weird Taiwanese spot tucked deep into a Spring Mountain strip mall. No one speaks much English, service is spotty, decor is mid-century-someone’s-warehouse, but some of the soups will save you a ticket to Taipei.

JURY STILL OUT

Flock & Fowl –

Will be changing its name and concept soon. Good bar food is tough to find, and better-than-average bar vittles is what they’ll be shooting for here. We’re rooting for it.

Milpa

Beautiful, fresh-ground tortillas, nice tacos, local sourcing, and hard-working chefs with a great idea in the wrong place.

Mint Indian Bistro –

Vegas once boasted a host of outstanding Indian eats….or at least a half-dozen addresses of acceptable sub-continent alimentation. What the hell happened?


That’ll do it for the first quarter of the year. As bullish as we are about Vegas’s restaurant future, it won’t truly be “back” until the great Strip dining palaces are open more than 3 nights a week. Fingers are crossed; breath is being held.

In the meantime, find someone who covers more territory than I do, and I’ll buy them dinner at Restaurant Guy Savoy.

What’s New In Vegas

What’s new on our restaurant scene?

Quite a lot, actually.

No other city in America can say the same, but Las Vegas, my dear foodie friends, is no ordinary city. We are the quintessential tourist town, with huge rumbling, cacophonous casino/hotels bestriding Nevada’s economy like so many Brobdingnagian towers — casting long shadows, quaking the earth, dominating the landscape.

Until now.

Now, like every other city in America our economic engine is moribund, comatose, on life support. Visitation numbers fell off a cliff in 2020, down to 19 million souls from a 2019 high of 42.5. And those coming are not the free-wheeling, high-spending conventioneers, whooping it up on someone else’s dime. No, these are the bargain hunters, the coupon-clippers, the escapees from California looking for something fun to do on the cheap. During the week, casinos are deader than Moe Dalitz. Even on weekends, the big hotels can feel like ghost towns. Shows are closed, shops are empty, and eatery options have been eviscerated.

Sounds depressing, doesn’t it? Well, it is and it isn’t. Because it is there (on the Strip)but isn’t here — in the actual town where 2.3 million Las Vegans live.

It seems the Strip’s loss has been the neighborhoods’ gain. New restaurants on Las Vegas Boulevard South might be harder to find than toilet paper in a pandemic, but the local scene is flat-out jumping. Downtown is leading the way, with a spanking new hotel (Circa), which opened late last year — the first new one on Fremont Street since 1980. It boasts five excellent restaurants, and seems to be busier every weekend. (We’ll deeply dive into its dining scene next week.)

A mile to the south, in the Arts District on Main Street, new joints are popping up like porcinis after a downpour. Can any other town in America say this?

Pretty doubtful. New York and California — the epicenters of American food/restaurant culture — are doing their best to crush the life out of the restaurant industry. Thankfully, little old Las Vegas has kept the foodie flame burning. albeit at bare BTU levels. But at least we’re open, and feeding people, and human beings are socializing and breaking bread together like humans were meant to.

While it might take those giant hotels another year to start humming again, locally, Las Vegas appears to be entering a new age of local dining — a resurgence led by a neighborhood that didn’t even exist four years ago, but now is one everyone is talking about.

YU-OR-MI SUSHI BAR

The Arts District in downtown Las Vegas is fast becoming one of the coolest neighborhoods in America. While it still has a ways to go residential-ly, food-wise the options are expanding geometrically. A micro-climate of good eats has sprung to life on South Main Street, boasting a dozen bars, four brewpubs, and three new restaurants within a stone’s throw of each other. All are much much better than they have any right to be.

Yu-Or-Mi (the name comes from a Jackie Chan movie) exists across the street from Esther’s Kitchen, a half-block from the Garagiste Wine Bar, and in a world of its own when it comes to Japanese-fusion food.

All the usual sushi suspects are here, but it’s in the small plates and rolls where the kitchen puts out an array of twenty appetizers that show a hand both refined and restrained.

Everyone does crispy Brussels sprouts these days, but the sweet-sour kurozu reduction on these keeps you reflexively reaching for another bite. Other standards like yakiniku (“grilled”) beef gyoza, rock shrimp tempura, tuna takaki, and chicken karaage rise above the cliches to remind you why they became famous in the first place.

The Yu So Shellfish roll (above) bundles lobster tempura with lobster salad in bite-sized packages of tofu skin which announce a textural, salty-sweet-seafood contrasts with every bite. The purist in me is horrified, but I can live with cutesy names like “Oh Snap” when the Japanese red snapper is this fresh, and the ginger-chili ponzu is this bracing:

Even non-ramen fans will have to admire the broth here — as rich as any you’ll find on Spring Mountain Road — and the yakisoba noodles and garlic fried rice are full of both subtlety and amplitude, no mean feat that.

All of these are conceived and executed by Chef Virakone Vongphachanh (he goes by “V” out of sympathy), a Laotian by birth and an inspired Japanese chef by temperament.

The sake list is not one you can get lost in, but the small selection is well-chosen and well-priced, and, for our yen, the only thing to drink with this food.

What YOM is doing is straddling a line between high-toned raw fish and crowd-pleasing concoctions — compelling creations that do its Nobu ancestry proud. Shopping mall sushi this is not. But the prices are fair and the setting is cozy and the downtown crowd has taken to it like barnacles to a boat.

GOOD PIE

Like its neighbor Main Street Provisions (above), Good Pie opened late last year when starting a restaurant was dicier than drawing to an inside straight. It survived serving pizzas to-go and by-the-slice, and with a recent opening of both inside and outdoor tables, chef/owner Vincent Rotolo is poised to re-set Las Vegas’s pizza paradigm.

Rotolo is a classicist in the vein of every family-run Italian joint up and down the East Coast pizza belt. The dark bar, white tile and comfy booths (along with the “Grandma Wall” of family pictures), puts you in mind of the type of place where you’ll hear, “Ma, who gets the scungilli?” or Faackin’ Yankees did it to us again” over the thrum of dough being slung.

And what dough it is. Quality flour, long-fermented, in a variety of styles, one bite tells you you’re in the midst of a higher-level of deck oven craftsmanship. The doughier, rectangular (Sicilian, Detroit) crusts have the complexity of great bread, while the thinner Brooklyn, and “Grandma” styles, display the crackle and char of their big-city forebears.

Ingredients matter is the mantra here, and from those crusts to the olive oil to the house-made tomato sauce to the ricotta and toppings, everything hits home. To my mind, there are almost too many choices, and the dizzying menu array can sometimes make ordering feel like a jigsaw puzzle. But amazingly, the pieces always fit no matter how you arrange them.

Beginners should tuck into a simple “Grandma” square, or Brooklyn round to acquaint themselves with the Good Pie oeuvre, while fressers should throw caution to the wind with a spongy Sicilian the size of a small desk, a Detroit-caramelized cheese crust carb-fest, or a “Quality Meat” 3-protein lollapalooza.  They offer something called “Mike’s Hot Honey” here to dribble on your pies, and, also amazingly, this little sweet-hot condiment adds quite the pleasant kick to counter the queso overload.

Those not in a pizza mood will be happy with Italian-American standards like chicken parm, “Sunday lasagna,” garlic knots, superb fried ravioli (above), great meatballs, and a decent Caesar salad.

Prices start in the high teens to $34 for the Grandma Supreme, but the round pies come in small and large, and the big boys will satisfy 6 hungry adults. I’m no fan of gluten-free pizza, but if you insist on eating yours on top of cardboard, Rotolo’s are probably the best in town.

Can a new school/old school pizzeria, which looks like it belongs on Wooster Street in New Haven, and acts like a modern restaurant (complete with upscale cocktail bar), come out of this pandemic smelling like a tomato rose? The crowds seem to be saying that it can. Pent-up demand for great pizza is real, people. Long may Good Pie’s red sauce flag fly!

MAIN STREET PROVISIONS

You can throw a stone and hit all three restaurants mentioned here. All were on the drawing board, and scheduled to open downtown in mid-2020. Covid put an expensive dent in everyone’s plans, and none more so than Main Street Provisions. Owner Kim Owens and Executive Chef Justin Kingsley Hall spent the entire year cooling their heels until finally, in early December, the doors swung open to….25% maximum capacity.

Putting the best face forward she could, Owens has said that the restrictions allowed her to dispense with the usual friends and family shakedown cruise, and let her staff get used to customers without dealing with overload at either the front or back of the house. Now that things are starting to relax, they’re going to have to get used to being in the weeds.

Hall’s menu can best be described as smokey and southern — as in Utah and the Deep South. To those descriptions add the word gutsy: frou frou bistro food this is not.

Right off the bat the Scotch Egg will catch your eye — a soft boiled and wrapped with smoked Riverence trout crusted with potato chips, sitting in a shallow pool of lemon cream. Nothing says “don’t try this at home” like a smoked trout Scotch egg in verbena cream, and it takes a chef with Hall’s chops to pull it off — cloaking the prosaic egg in a sophisticated wrap which enhances both of them.

Beyond that, you’ll find a unique butcher plate of smoked meats, pates and rillettes made in-house, accompanied by fry bread that is pretty much the last word in Native American carbohydrates:

The same bread sits alongside an herb-flecked hominy hummus studded with preserved lemon, which turns something with usually all the interest of drywall spackle into a compelling starter. I wish I could celebrate the use of barely-seared venison in a tataki of whiskey-shoyu dressing, but the venison doesn’t come through and the whole dish feels like the chef is trying too hard. Likewise, the deep-fried, breaded Sole Kiev (wrapped around herb) butter feels forced and out-of-place on a menu brimming with interesting edibles.

Once you get past those misses the hits abound: rosy red Heritage Ham Steak blanketed with a sour-sweet pepper-tomato sauce, charcoal roasted quail gumbo with smoked andouille sausage stuffing, a serious New York strip dubbed “Utah Woman’s Steak” (after Hall’s wife) that comes with a one-two punch of aggressive, charred scallion chimichurri sauce and a soothing “funeral potato” croquette.

The burger is good, if a bit overloaded (with pickles, smoked cheddar and fried onions), but all sins are forgiven once the poached rabbit sausage with potato dumplings shows up. It is flat-out great, and for our money, should be the restaurant’s signature dish:

Any restaurant bold enough to serve rabbit sausage, quail, hominy, and ham steaks is clearly trying to set a trend, not follow one, and the feeling one gets when sitting down here is of a chef who is cooking the kind of food with which he and his friends like to impress each other — gussied-up for restaurant customers of course, but substantial, rib-sticking stuff done with a chef’s flair and an eye for detail. It may not be the lightest meal you’ll have in Las Vegas, but it will be one of the most original, and there is no more interesting cooking going on right now than down on Main Street.

Whenever something threatens to feel a tad overwrought (the fish, that venison), Hall pulls you back to the simple reality of exquisite ingredients being allowed to shine, as with his harissa carrots (roasted, of course), oat milk grits, cattlemen’s bbq pea beans, and Louisiana popcorn rice (served plain or with schmaltz). These side dishes are frame-worthy on the menu (and would make a great meal all their own). The one salad we tried — For Ernie’s Birds — was a tantalizing tumble of local greens and seeds, dressed just-right in an herbaceous chimichurri vinaigrette.

Desserts are few in number but pack a wallop, especially the butter cake: another homage to the caloric glories of the South and southern Utah.

Like its neighbors, MSP has feng shui in spades. It is long and narrow with welcoming bar to one side, and colorful, comfortable seating pointing to an open kitchen in the back. The effect is to pull you in and make you feel like you belong there.

Whether by design or happenstance, all three of these restaurants have an inviting familiarity about them. Each reminds you of small, personal restaurants shoehorned into intimate spaces in large, impersonal cities. Restaurants like these give metropolitan spaces their warmth and livability. They are human scale, not profit-scaled by real estate developers. There are no anchor tenants to block out the sun, nor soul-killing ginormous parking lots to traverse. Cars drive by at civilized speeds, they don’t whiz by in a hurry to get to the secluded glory of living in the isolated splendor of a stucco farm.

Time will eventually credit these pioneers for changing the way Las Vegas looked at restaurants — for tapping into a market hungry for the real thing, not pre-packaged template dreamed up by a corporation in Dallas or Tampa.

The world is coming out of this pandemic, and the pent-up demand for authenticity will be real. It will be for community, and for togetherness and for gathering around food and drink prepared by people who care about these things as much as you do.
