Wing Lei, at the Wynn, is the only Michelin-starred Chinese restaurant in America. Chef Richard Chen creates a menu that is fascinating (and manageable) whether you’re an Asian high-roller or someone who thinks sweet and sour pork is as exotic as it gets.

I’ve had two recent meals here-one a big deal, pull-out-all-the-stops one with John Mariani-the other anonymously-and both have been deeply flavorful and technically perfect.

The service is also some of the most polished in Vegas-and that’s really saying something.

Amazingly, I also found an Alsatian Tokay-Pinot Gris from Pierre Frick (’03) for $57 that went splendidly with the food. Has my friend-Danielle Price-uber-wino and Wynn Wine Director-heeded my entreaties and worked towards bringing affordable wines to the Wynn’s Murderer’s Row of restaurants? We’d like to think so, and thus are taking full credit for this fabulous Frick find….even if it isn’t deserved. ;-}

We’ve already sung the praises of Louis Osteen’s low country cooking on these pages….but now you can watch us do so on this week’s Channel 8 Restaurant of the Week segment, seen every Friday on the KLAS TV Morning News, with my good buddies Denise Valdez and Dave McCann.

Listen for Dave’s revulsion at the very mention of a crab cake, and please know that it is my sworn and solemn duty to someday, somehow get the McCann Man to actually taste a piece of seafood on the air, and say that he likes it.

Food For Thought-Bad Manners

On this week’s Food For Thought-heard on Nevada Public Radio (www.knpr.org)- we address the “free dessert” dodge that restaurants use to (try to) placate a customer when something goes really wrong with a meal. I don’t know about you, but I’d consider a piece of twisted metal in my gnocchi a definite buzz kill….worthy of more reparation than a lousy piece of cheesecake.

BTW: the offending restaurant was B&B Ristorante (Molto Mario’s place) in the Venetian.
