They don’t make ’em like El Sombrero any more. Every town, hamlet and city in the Southwest used to have one, or a number of them. Little hole-in-the-wall Mexican joints with a cook and a family working away, seven days a week, rolling out tortillas, pureeing chilies and dishing up the food of their homeland for folks of all stripes.

Here they are: the hottest single dishes in Las Vegas. Any one of them will light your palate up like Christmas tree, turn your face flush, make your eyeballs sweat, and inhibit your ability to speak a single sentence…which you can see for yourself if you scroll to the 30:09 mark on the video at the bottom of this post and watch us eat five bites of the hottest food you can imagine, any one of which would slay even an average chile-head.

Is this innocent-looking, spicy squid salad from Lotus of Siam the most lethal dish in town?
You’d have a hard time convincing our fiery foodie friend (and major chile-head) Danny Axelrod it’s not (even though he claimed to be unfazed by the heat), since his face looked like this after a few bites:
