Ed. note: Every week we get e-mails, DMs, texts, etc. asking for our favorite (fill in the blank) __________, steakhouse, sushi, dim sum parlor, high falutin’ French, you name it. We’re always happy to send advice along, but none of those make us think the way Jessica recently did:

Dear Mr. Curtas,

For the last 10 years I have followed your works. Dreaming of the indulgent, and exquisite food you have been blessed to eat. Now, at just shy of 30 years old; I have finally decided on a career change. From being the youngest person in the state of Indiana to get my cosmetology license. To then being a stay at home mother. I have finally decided,  after decades of loving food, cooking and eating. I want to write about, and share my food experiences, like yourself.
 After doing research on how to start, it seems quite daunting.
At this point you must be wondering why I am even bothering you. I would like to ask your advice. What is a good way to start out in the field? Should I go straight to social media? Should I be blogging? Should I make Tic Tok and YouTube videos? Do I need a shtick  (like I only eat at certain types of places)? Any advice you are willing to bestow upon me, would be more then welcomed!

I’m going to give you two answers – one short (sort of) and probably along the lines you are looking for, and the other, another in a long line of my logorrheic lamentations on my alimentary ascriptions.
Answer #1:

The first thing I would coach you to do is look around and then look inward. What are you really passionate about? Is it cooking? Eating out? Do you love something about your family’s food history that you’ve always wanted to share with others? Do you have family recipes you are proud of? Are you an avid baker? Does the thought of hunting down a great food truck quicken your pulse? Or do you dream of gourmet meals in dressed up settings?
This is a long way of saying yes, to get followers and be successful at this (however you define success) you will need a point of view and a shtick….but that shtick should always be an extension of who you are.
Then, I would look around where I live and check out who is covering the food scene. Check local magazines. Google local food bloggers. Check out TikTok and Instagram and see who is posting a lot in your area. And podcasting. Hell, even check out “elite Yelpers” and find out what they’re talking about.
Like any worthwhile endeavor, you have to start small. The greatest chef began making bread at his grandmother’s knee. The Hall of Fame ballplayer was once in Little League. Search for a niche in an area you love and see what unique voice you could bring to the subject.
Define what is special about your love of food and approach it from that angle. Use others for inspiration but try to find what makes your love of food unique to you and then figure out the best way to share it with others.
As for social media, I’m all for it, even if, for writers like me, its explosion has been more akin to what that asteroid did to the dinosaurs. TikTok is for youngsters (sort of) and those with the time (and skill) to produce short videos. Nothing against gloppy cheese pulls and humongous tacos, but there’s a gazillion TikTokkers and YouTubers out with whom you will be competing. Distinguishing yourself is going to be mighty hard. But if videos are your thing (and for those under 40, they seem to be), have at it. The learning curve isn’t that steep, but you have to do whatever you do consistently. The food landscape is littered with people who wanted to blog, or podcast, or post about food on some site, and then flamed out after a few months. The only way to build a following is to be a constant presence on whatever venue you choose, and hope that word of mouth increases your visibility.
Instagram is simpler, and becoming easier (either for still photos or videos), with the added bonus of now being more realistic and less concerned with professionally-polished content. As a recent article in Eater put it:
“The things that I see in photos now are really more of that photo dump style,” says Maggie. “It’s less of the perfectly curated marble studio and more interest in my actual kitchen that I actually cooked in.”
All of which bodes well for klutzy amateur food photogs like us, who simply want to get people excited about the foods we love.
To summarize: Find a shtick you love and shtick with it. Pick your platform and go nuts. But always be yourself.
If you truly want to write about food, the climb is much steeper and the audience much smaller, as you can read below…

Before I begin doling out the infallible, inspiring, and unerringly erudite advice for which I am known, let me begin by noting that the landscape has changed dramatically since I began my career in food, no more so than in the past decade. The following is a much longer overview of my food writing trajectory (over ground which has been plowed before), to give you a little history on the subject of food writing, and perhaps some guidance.
I do not know how well you write or how much you intend to do it. I used to say that to be a good food writer you had to cook a lot, eat a lot, travel a lot and read a lot. The past ten years have relentlessly, systematically dismantled each of those (supposed) pillars of knowledge. Now, all you have to do now is know how to manage a social media account, none of which have anything to do with the written word. Cooking knowledge, eating adventures, and traveling experiences have also taken a hit, since with the swipe of a finger, a person can sound like they know all about Hong Kong dim sum parlors, or the best pastrami in New York.
Back in the Late Cretaceous period, you had to put in the work. Now, all you have to do is…

Writing is rapidly becoming a lost art, right down there with toad doctors and drysalters, Though it may be an endangered species, for forty years of my life, the written word was the only way to communicate about food. In cooking, home cooks used to have to decipher impenetrable prose to learn a recipe from a printed page. This was how people were taught for over a century. Now, you can learn everything from mille feuille (puff pastry) to how to butcher a whole pig from a YouTube video.
Writing is hard. A real pain in the ass. (The classic saying is: writers hate writing but love having written.) Writing is its own reward, but you have to be driven to do it, and do it all the time. You can no more be an occasional writer (about food or anything else) anymore than you can be a good part-time violinist.
If you want to write about food, it helps immensely to be a good writer first. One can learn to write well, but as with music and sports, it helps to have a facility for it, and to start young. I knew I could write about food before I ever started doing it. I knew it in the way a good athlete knows from the beginning that they can play their sport. But as with golf (my favorite sport), even if you’re good, you have to keep at it, and even with constant practice, it can be frustrating.
Reading and writing are exponentially harder than talking and listening, which is why there are 2.4 million podcasts out there, and also why so much food media has taken to visual and spoken word platforms. Posting videos beats the pants off of slaving away for hours at a keyboard trying to think of entertaining ways to describe a dish or a meal. This is not to say producing YouTube content or podcasting is easy, but it ain’t as hard as churning out a thousand entertaining words about a restaurant.
Precious few people now want to read about food anymore than people want to write about it. The internet has created a race to the bottom, with both media and customers feeding off each other (PUN. INTENDED!) by demanding less and less in the form of thoughtful content — the triumph of unbridled narcissism over gastronomic rumination.

In the beginning, there was nothing insidious about social media platforms. They were convenient and free and immediately brought millions into the world of good food, nutrition, and better eating. In the space of this century they made more knowledgeable consumers out of an entire generation. I called this the Age of the Blogs (2002-2012) and what others have called the “good internet” or the Golden Age of the Internet — when people sought out websites and in-depth information about everything from pizza to politics.

Once Facebook took off though (around 2010), followed in short order by Instagram (in 2014 ) most blogs got plowed under by the sheer mass of two sites where everyone could get their news, info, pictures, and friends without ever having to leave a web page (cf. search engine optimization).

The rise of social media further combined to (almost) obliterate the mainstream food media where I made my reputation. Ten years ago, you could find me all over old school venues and some social media. Now it is just the opposite. I made my name by writing — first with radio commentaries (about food and restaurants), and later in print periodicals, which led to this website, TV appearances and eventually to my book (shameless plug alert!): EATING LAS VEGASThe 52 Essential Restaurants…

The big national food magazines now exist only as a memory. Most local periodicals have either thrown in the towel, or gone completely to the free internet (with content that appeals to those with the attention span of a housefly). Food TV (what is left of it) has been reduced to ridiculous competition cooking shows. What has been buried under this avalanche of information are pearls of  wisdom. (MIX! THAT! METAPHOR!) Expertise is no longer valued. Now people want short, sweet and sexy — easy-to-digest info better at grabbing attention than making you think.
It is into this world you will step, Jessica:.

Thus is the food media world now paradoxically saturated with content and starving for substance. Most media is either pay-to-play (advertorials disguised as journalism), or the kind of “influencer” nonsense (pretty pictures and gooey videos) designed to advertise to Yelpers.  Getting paid to write anymore is a pipe dream. The few of us who still get freelance gigs are doing it for peanuts. The number of food writers in America who actually draw a salary they can live on would probably fit around my dining room table. The days of Anton Ego are long gone.
So, whatever you do, dear Jessica, do it for yourself and no one else. The best a young person can hope to do in this climate is to develop an audience through social media, and then cultivate some kind of content-creating gig that will pay enough to subsidize your culinary appetites. But keep in mind, you will never be good at what you do, if you are only doing it for the clicks, or the $$$, or  the free food.

In his excellent essay on the essence of criticism, H. D. Miller writes:
Anton Ego has a pure soul. He is someone who cares only and exclusively about art (in this case cookery). He knows what is good and suffers enormously from what is bad. This is close to what I mean by “critical sense”, that the critic knows, deeply knows, the difference between what is good and what is not and is emotionally affected by it.
The job of a good critic is to educate, not simply appeal to the lowest common denominator. You must be in love with what you are writing about, and you should want to relentlessly share you passion with others. Without that level of emotional commitment, you will most certainly fail. With it, you will always find the devotion to keep going, no matter how large or small your audience.
I have always written for me, or someone like me. Every word — going back to my first radio scripts of 1994 — has been aimed at an avid home cook with an insatiable love of restaurants, travel, food and drink. I write for someone who gets as excited by a good cheeseburger as they do about a life-changing gourmet meal. Most of all, I have written for that person who wants to eat the best food, in the most authentic places, wherever they find themselves. Who wants to know why this taco is better than that taco, or why some famous chef isn’t worth your time or money, while some unknown cook, slaving to make the rent, is worth a trip — sometimes across town, sometimes across an ocean.
This is the best advice I can give you: think about who you are and what you love. Write, blog, podcast or produce something in whatever format for the person you are, and for an imaginary person just like you, who gets as excited as you do about whatever it is you are talking about. Do that and you will find an audience who appreciates you for all the right reasons, no matter what its size.

The Speech

Speaking in public is as natural to me as polishing off a Poulet de Bresse en Cocotte avec Champignons Glacée et Truffes with a bottle of Clavoillon Puligny-Montrachet 2018.

Between my legal career, trial work, teaching gigs and second career as a semi-famous food critic, I suppose I’ve addressed crowds (ranging from a handful to hundreds) at least a thousand times in my life.

In that last capacity, I get asked occasionally to give talks to local groups who want to hear about my career as that food dude who has spent most of his adult life obsessing over restaurants.

About a month ago, I gave such a speech to a nice group of local Rotarians. Wonderful people; nice lunch (at the always-lovely Lawry’s).

It was a version of the same talk I’ve given many times over the years, charting the culinary history of Las Vegas, my food-writing origins, and the state of our gastronomic state….all of it spiced with recommendations and tales of my many tangles with celebrity chefs.

I was sober, not hung over, and plenty prepared (not always the case years ago). But still, I rambled and forgot a few things, and it’s been bugging me ever since.

My wife (the long-suffering Food Gal®) was in attendance and gave my speech a “it was fine, you were great” review in the same tone she uses to cheer me up after another mediocre performance in bed.

So….I’ve decided to actually write out the same speech I’ve been giving for 25 years and condense my thoughts into a single 20 minute script.

There may never be a next time. Perhaps my speech-making days are over. (As I told the Rotarians: I’m a dinosaur and I know it. I was Las Vegas’s first real restaurant critic, and I’m probably destined to be its last.)

But if there is another one, if I am asked to give one more, I’ll be prepared, for once.

Intro

The three questions I get asked most often when someone hears I am a restaurant critic are: How did you become one? How many times a week do you eat out? And how do you stay so thin? (turn sideways) The answers are: It’s a long story; ten times a week; and I have the metabolism of a hummingbird.

As for my weight, well, to quote the late, great Los Angeles food critic Elmer Dills (remember him?): I’m not as fat as I could be nor as thin as I should be.

Being a restaurant critic is a lot like being a horse put out to stud: It sounds like a great idea until you have to do it on command, all the time.

Anyway, being a serious critic — one who writes for money about restaurants on a regular basis — you get a lot of dudes (it’s always guys) who’ll look at you and say, “I could do that; sounds like fun No big deal. I like to eat.” It’s the same shit they say when they meet  male porn starts: “Damn dude, that ain’t work. Sign me up!” Well, like a porn star, you look at these fools and say, “No, dude, you can’t. You couldn’t keep up with me for three days.”

Of course, as with sex, the tasting is the fun part; the work is in making it fun for others. But more on that in a minute.

First, let’s talk about how Las Vegas went from “The Town That Taste Forgot” to Gourmet Capital to Celebrity Chef Hell…

So….how DID we go from the Town That Taste Forgot to one of the gastronomic capitals of the world? People like to say it started with Wolfgang Puck at Spago in the Forum Shops in December, 1992, but in reality, it began a few years earlier with a chain steakhouse….and that steakhouse was…

Ruth’s Chris! Yes, as the story goes, Ruth Ertel — the founder of Ruth’s Chris — loved to gamble in Vegas. Her favorite dealer at Caesars was a fellow named Marcel Taylor. Taylor was an ambitious sort, and sometime in the late 80s he persuaded Ertel (over the objections of her board of directors) to open an outlet in Las Vegas. The thinking then was: Why on earth would anyone ever leave a casino to eat? Every hotel in those times had four different eateries: a coffee shop, a buffet, a steakhouse, and a “gourmet room” serving “continental cuisine.” (From which continent they never really specified.)

Keeping the customer captured was on every hotels’ mind back then. The thought that people would leave to peruse the dining options at another hotel was ridiculous. The idea they might venture a mile off the Strip to eat was unthinkable.

But in 1989 Ruth’s Chris opened on Paradise Road and within a year it was the best performing venue in the chain. Other prime chain steakhouses took notice, and within a couple of years, Morton’s and Palm (back when both were actually good) had opened outposts here.

The next big moment came in 1994/1995 when Gamal Aziz (a forgotten name but pivotal in birthing Vegas’s gastronomic renaissance), brought Emeril Lagasse, Charlie Trotter, and the Coyote Cafe’s Mark Miller to the MGM. Soon thereafter, a non-celeb chef joint at the MGM –Nob Hill — was the first restaurant in Las Vegas to spend more than $1 mil on its build-out. These days, $10+ mil is more the norm.)

Steve Wynn paid close attention to the the success of Spago, and the MGM. By 1998, when he opened the Bellagio, he was ready to dial things up to “11”. As I’ve said many times: when the Bellagio opened in Las Vegas, the gastronomic ground shook in the High Mojave Desert and the whole world felt the shudder.

People take it for granted now, but the Murderer’s Row in one hotel: Julian Serrano at Picasso, Jean-Georges Vongerichten’s Prime, Olives, Aqua, and the Maccioni family, with its double-magnum of of Big Apple excellence —  Le Cirque and Circo — was like nothing ever seen, in any hotel, anywhere in America…before or since.

By the turn of the century, every national food and wine magazine, not to mention most major newspapers (remember them?) were sending writers to cover our restaurants.

(If you’ll permit me a slight detour: then and now, the lack of attention paid by Las Vegas’s mainstream media to the culinary explosion going on on the Strip, has been an embarrassment to this town since 1995. And don’t get me started on the lame-ass lip service paid by our LVCVA to our food scene — even though our restaurant scene has been, for over twenty straight years, one of the most famous in the world. Our world class dining became a big deal in spite of our local media, not because of it.)

Thus it was written in The Book of Ruth’s Chris (any biblical scholars out there?) that one steakhouse begat another and the MGM begat the Bellagio and Bellagio begat Mandalay Bay which begat the Venetian, which begat Caesars upgrading its dining options, as well as begatting all sorts of bar raising for new hotels like Aria and the Cosmopolitan.

The early aughts were the halcyon days of the celebrity chef  — Ogden, Palladin, Palmer, Batali, Flay, English, Keller (both of them), Mina, Lagasse, Andrés — when casinos would throw money at anyone famous if they’d agree to slap their name on the door. This regrettably led to to the Giadas, Ramsays, Changs and Fieris showing up (who were not, let’s say, as dedicated to quality as the original pioneers), but as with any fad, you have to take the good with the bad.  On the whole, though, it was a net gain for all concerned, and going to Vegas just to eat (something else that was unthinkable in 1995), became a trend in its own right in the first ten years of this century.

A word or two about celebrity chefs: I’m of two minds about famous chefs: on the one hand, they made this town. On the other, most of their restaurants are a joke, the culinary equivalent of an Elton John picking up a fat paycheck for a show where others sing his songs for him. Without celebrity chefs we’d all still be swooning over the Circus Circus Steakhouse; now that they’ve made their mark (and their cash), most of them should slink back to whatever TV studio keeps them employed. Just the other day, I had a colleague ask me about Bobby Flay’s new Italian restaurant, because, he said, “My wife likes Bobby Flay.” (eye roll) Summoning all the tact I could muster, through clenched teeth I muttered: “Bobby Flay is to Italian food what Chef Boyardee was to noodles.”

Famous chefs (most of them) are just brands. They don’t cook; they don’t even run businesses. They just sell their names for cash. Cash that you pay. For the privilege of them not cooking.

What started as the raising of the bar in a few huge hotels, got taken to the Stratosphere (the atmospheric one not the pathetic one), when the French Revolution took hold between 2005 and 2010. In short order, we saw three of the world’s greatest chefs — Joël Robuchon, Guy Savoy, and Pierre Gagnaire — plant their flags, directly from Paris, and our gastronomic revolution was complete. By 2010 even snooty New Yorkers and imperious Parisians were taking us seriously.

Now, let’s be honest here: did all this fame show up because of our wealth of natural resources? Our verdant food culture? Amber waves of grain and pristine seafood? Nope, they came because there was gold in them thar hills and every one wanted a nugget. 40 million mouths are a lot to feed, and unlike Orlando or Branson, MO, the Vegas tourist is flush with cash and ready to spend it on experiences they can’t get there or in Paducah. (I don’t know what people spend their disposable income on in Branson and Paducah, but I’m pretty sure it isn’t overpriced caviar and champagne.)

These fancy schmancy restaurants weren’t for everyone, but they represented an aspirational level of hospitality you couldn’t find anywhere but Vegas! Baby! And it was available to all! Unlike intimidating New York, snooty Paris, or self-impressed ‘Frisco.

And talk about the pendulum swinging: in about a decade (95-‘o5), we went from 99 cent shrimp cocktails and cheap buffets to being the most expensive high-end restaurant city in the country. Not to harp on the sex thing again (but it is fun isn’t it?), but some Vegas menus (and wine lists) should be served by a proctologist with a side of K-Y Jelly.

The trouble with reaching the top is, like the New England Patriots, you have nowhere to go but down….and that, ladies and gentlemen, is where we find ourselves today. To be sure, the rising tide has raised all boats, but staying afloat, will be harder and harder in the coming years. Big deal meals are not the big deals they used to be, and the quadruple whammy of aging Boomers (who fueled the 90s boom), fading celeb chefs, the Great Recession, and the past two pandemic years have made the future of fine Strip dining very uncertain…and that’s where our local dining scene has stepped up to the plate.

While the Strip may be in a slump, new things are constantly happening in Summerlin, Chinatown, and Downtown. And I’m happy to report there are now even good things to eat in Henderson, of all places (Saga, Rebellion Pizza). Where there used to be only a sprinkling of local spots and miles of franchises, now you have locally-owned, affordable, chef-driven restaurants making big splashes all over the ‘burbs.

Even if peak Vegas has passed, we still boast the best steakhouses in the world of any city that isn’t New York or Tokyo; our Chinatown is a bang-for-the-buck gem; and female chefs (like Jamie Tran, Gina Marinelli, and Nicole Brisson) are dynamos powering our local restaurant resurgence. And at the drop of a hat, I can start waxing poetic about our French bakeries, coffee scene, gastropubs, and pizzas galore.

And you can criticize Millennials, Gen-Xrs and the Instagram/Tik Tok generations all you want, but they’ve been raised to demand better ingredients and better eating and that genie ain’t going back in the bottle.

Becoming a Critic/Doing the Work

Okay, you’ve had your history lesson, but who’s this fellow giving it to you?

To answer the first question I posed at the top of my remarks, I’ve been covering the Las Vegas food and restaurant scene since 1995. When I started I was it: there were no others writing about food with any regularity or even the pretense of journalistic objectivity. I’ve never been especially prescient in anything (as my ex-wives can tell you), but one thing I did see coming down the pike was the sea change about to envelope our food and beverage industry.

As they say: In the land of the blind, the one-eyed man is king. So I started knocking on doors and asking media outlets if they were interesting in having someone cover/critique all these fabulous new eateries that were invading our humble burg…first in a trickle, and then in a tidal wave. No one was interested except Nevada Public Radio. I aced the audition (and already had a face made for radio), so I started my radio commentary years with a tongue-in-cheek admiration for Martha Stewart telling me what size tomatoes to buy.

 My first gig on KNPR radio was a sweet one for 15 years. From there I moved into segments on our local CBS and NBC affiliates, wrote for every publication in town except the Review Journal, and eventually ended up writing 8 editions of Eating Las Vegas – The 52 Essential Restaurants, which published its last edition in 2020.

Basically, I got into food writing because I wanted to be a consumer advocate. At their core, that’s what any critic is. When it comes to food, we want to guide you to where best to spend your hard-earned cash, and at our best, we teach you something while we’re doing it.

You may not like my advice on tuna tartare or tacos, but I share it from a storehouse of experience going back decades now, and from trips to Tokyo to Tuscany. To be a good food critic you need to eat a lot, read a lot, cook a lot and travel a lot. Thankfully, I’ve been able to do all four. (That hummingbird thing really helps). Comparison might be the root of all unhappiness, as Cicero said, but it’s also informs every good critic’s opinions.

Food writers are dinosaurs and we know it. Once people could take and access high quality pictures of potential meals on their phones, our goose was cooked. But we still bring something to the table. When you peruse social media for pretty pics or recommendations, all you get is crowd-sourced opinions based upon personal preferences. All taste is subjective, of course, but having done the work, traveled the globe and eaten everywhere (especially in Vegas), what I offer is the same thing Anton Ego did in the movie “Ratatouille”: perspective. An Instagrammer will only tell you if they liked something; a good critic will tell you why you do.

At this point I’m pretty much the professor emeritus of Vegas food writers, and I content myself being an influencer, occasionally writing blog posts at www.eatinglv.com (like this one!) and spreading the love for all the worthy eateries I can find.

I’ve been very lucky: I’ve had a front row seat for the biggest culinary revolution ever to happen to an American city. In spite of my prickly opinions and prejudices, I have enormous respect for people who work in restaurants. To be a good critic you have to be in love with your subject and I am. I have been in love with restaurants since I was eight years old and my passion has never waned.

I am in love with them and always will be because a good meal, shared with family and friends, is the loveliest expression of our common humanity that I know. As the great food writer Alan Richman once said: “Food is life itself, the rest is parsley.”

The Taste(s) of a Critic

So are restaurant critics.

Unlike the rich in Fitzgerald’s quote though, we don’t think we’re better than you, just more observant.

More tuned in. Less distracted. More sharply aware of the fine points of the food we are sticking in our mouths.

Are we snobs? Absolutely. Of the highest order. Don’t you want any professional critic (of art, music, literature, design, etc.) to have the highest standards? To bring years of education and discrimination to the subject at hand?

Of course you do.

Nothing would be more boring, and less useful, than a “critic” who liked everything. Fast food tacos? Great! Canned soup? Beat a path to that door! The 24th link in a celebrity chef’s chain? Don’t miss it!

If you’re looking for an educated point of view, then you seek out and read someone who knows their stuff. And by “knows their stuff” I mean has a wealth of knowledge based upon real world experience, travel, study, and deep involvement with the subject. You want opinions, Yelp is full of them. If you want to learn something, read on.

To a food critic, every bite, every meal is really about one thing:

Perspective. A point of view. Vision. The intent behind the food. What is it that this restaurant is trying to do and how well do they do it?

There can be as much perspective behind a taco truck as there is at Twist by Pierre Gagnaire. Is the truck content to sling the same stuff dozens of others are doing, at a cheap price, to help you feed your face quickly and cheaply while helping it pay the rent? If so, then there ya go.

Or is it aiming higher? Are the salsas not out of a can? Are the tomatoes riper, the meat better, and the seasonings finer? Were the tortillas made minutes or days ago? After your second or third bite, are you saying to yourself, “Self, I can’t wait to come back here”?  Or are you just happy you are not hungry anymore?

…but it’s what you always seek — the Holy Grail of Food — something so intense, so transporting, that memories are stirred of the visceral, the elemental, the emotional ties we have to food.

All a critic is looking for is either that imaginary transportation to another place, or to be riveted to where you sit. If food achieves neither it has failed you. Your mother’s chicken soup could do it; Joël Robuchon’s mashed potatoes do it. A great piece of meatloaf can be just as soul-satisfying as a French Laundry degustation.

One of the reasons critics disdain fast food is because it divorces food from time and place, memory and feeling. Fast food is food as fuel and that’s it. There is no connection, no enrichment gained from eating it. The spiritual binding brought forth from a simple home-cooked meal is non-existent. We cram, we get full, we are connected to nothing but the will to stay alive.

If chain restaurants represent one end of the feeding spectrum, then critics occupy the obverse. Food is the furthest thing from fuel in a critic’s mind. It is an ideal to be sought; perfection to pursue….sometimes with hesitance, sometimes with gusto. To search and find perfection is our quest, but we’ll settle for excellence, wherever we find it.

Perfection is unobtainable, in art or food, but excellence can be anywhere. And in searching for it with every bite, you acquire what I call a taste Rolodex in your head.
Every bite contains a comparison. A spoonful of ice cream gets graded against every other one you’ve ever had. When you stumble into Giolitti in Rome for a scoop, from your first lick you’re comparing it to La Strega Nocciola in Florence, which, you recall, kicked the ass of that poseur franchised crap you had in New York that time. And when you stroll into Gelato di Milano in Las Vegas, consciously or unconsciously you are holding them to those standards.

The glory of course is in the pursuit; the obsessive hunt for the best. And if you’re going to obsess over anything, what’s better than having an all-consuming ardor for something you have to do twice a day to stay alive?

Yes, we can dutifully shovel proteins, amino acids, starches and complex sugars into our piehole, solely to stay alive, and not give them another thought.

But nature gave us a sense of smell and taste for a reason: to discern the edible from the inedible in the wild. Modern man doesn’t live in fear of dying from toxic berries or diseased meat, but the same skills our ancestors used to eat healthily thousands of years ago serve us well today when deciding the right time to eat a piece of fruit, or when a protein has been cooked to its optimum flavor potential.

On some level, that’s all a food critic can tell you. Did they know how to season it and know when it’s done? There is your baseline. Then, there are finer points and deeper dives: Did the foie gras poached in Sauternes (above) taste of wine-drenched, silky liver, or just salt? Was it properly cleaned?  Is the recipe trying to mimic a classic? Or a riff on it? Or is it a copy of a copy of a riff on a classic? Is the ornamentation on the plate for taste or show or both? Are there too many elements to a dish or not enough? (Rarely the latter.)

All gastronomes are searching for dishes of high amplitude – where the flavor elements converge into a single gestalt. A good critic should likewise be such an inquisitive epicure (or at least aspire to be one), even though many, sadly, are not.

A knowledgeable critic has a wealth of experience in his brain (that Rolodex thing again) to give you answers to these questions. Does that mean he’s right and you’re wrong if you disagree with him? No, but if he/she is doing the job right, at least they’ve given you a baseline of information upon which to make your own judgments.

As with movies, a good critic can not only tell you if something is good, but why it is so. No one said it better than Rogert Ebert:

I believe a good critic is a teacher. He doesn’t have the answers, but he can be an example of the process of finding your own answers. He can notice things, explain them, place them in any number of contexts, ponder why some “work” and others never could. He can urge you toward older movies to expand your context for newer ones. He can examine how movies touch upon individual lives, and can be healing, or damaging. He can defend them, and regard them as important in the face of those who are “just looking for a good time.” He can argue that you will have a better time at a better movie. We are all allotted an unknown but finite number of hours of consciousness. Maybe a critic can help you spend them more meaningfully.

Substitute “food” for “movies” in the above paragraph and you have the best defense of a restaurant critics I can think of.

Finally, we come to the question of the actual tasting itself. How does a critic evaluate a dish? Is it different from how you taste food? Most likely. It is certainly a lot faster.

Hypersensitivity is our calling card — to raw ingredients, degree of doneness, balance, temperature, spices, herbs, texture, mouthfeel (not the same thing), harmony, assertiveness, amplification of one note over another — all of which goes racing through our brain before the second bite.

As with wine or music, once you understand the subject on a deeper level, you’re incapable of being satisfied with mediocrity. You might be perfectly happy grooving to the sweet, sweet sounds of Donny and Marie singing their greatest hit, but someone schooled in classical music or modern jazz is not so easily amused. In another life, Domino’s pizza might’ve sufficed; now it makes you want to barf.

Then there’s that pesky perspective thing again: how does this dish, this restaurant, this meal, fit within the context of every other meal, you’ve had?

Back to Ebert again, he quotes Socrates when arguing that “an unexamined life is not worth living.” He pushes the movie goer to understand both their and a filmmaker’s philosophy about a movie, in order to explain with some depth why you like or don’t like a film.

It would certainly be nice if all movie buffs had that level of understanding, just as I would argue that if everyone who eats (and that would be everyone) would examine their food with same intellectual rigor a critic does, the world would be a happier, healthier place.

In reality, this will never happen. All a passionate critic can hope for is to shine a small ray of enlightenment on your meal. You should go to Bouchon for oysters, for example, because they always seem to get the plumpest, briniest specimens in town. (Or Sage, for their classic Tabasco sorbet-topped beauties, above.) The selection at Bouchon is never too large and the staff always knows their bivalves. This is the sort of information an informed consumer should have in their holster before dropping fifty bucks on a dozen of them.

Does this mean you will identify the watermelon/cucumber notes of a deep-pocketed Kusshis the same way I will? Perhaps not, but if you taste them next to some $1 oyster bar (Hello, Palace Station!), you would find it’s no contest. Such is the ground a critic plows so you won’t have to.

Yes, I get ecstatic over restaurants like Bouchon and Sage, just like I do over oysters, pizza, steaks, tacos and the fanciest French food you can imagine. (I can still recall my oyster epiphany in Brussels almost thirty years ago, when the slippery little critters were so fresh and alive they contracted when hit with a squirt of lemon.) Such was the beginning of a life-long affair.

As any romantic can tell you, once you fall in love, falling in like is no longer an option. To be a good critic, you must love your subject even when it isn’t loving you back.

True love is like that.
