Farm-raised “Atlantic salmon,” besides not tasting as good as wild, also messes with Mother Nature by fouling the environment and, in some cases, producing a genetically-modified species that looks like the fish equivalent of Barry Bonds’ love child with Mark McGwire.

“Ahhh civilization, ” is the first thing ELV utters whenever he finds himself on the streets of New York, Chicago, San Francisco, Hong Kong, London, Rome (Italy, not Georgia) or Paris (France, not Tennessee). Civilized folks in big cities take time for a proper lunch. Not a sandwich standing up or a shitty salad bar or a cattle call buffet. A proper lunch. In  a res-taur-ant if you have the time and money, or a cafe, bistro, trattoria, noodle or dim sum shop if you don’t.

SLOW DOWN, SAVE A SALMON

If you think about it, that Thanksgiving meal you had last Thursday was a celebration of the Slow Food movement’s philosophy. That philosophy being, according to the Slow Food charter: “Celebrating food traditions of North America through programs and activities dedicated to taste education, the defense of biodiversity, and the building of food communities. Because America’s Thanksgiving feast is, if nothing else, a time to slow down and savor good food and good company.

Perhaps you were thinking about that as you were stuffing all that stuffing into your pie hole….
