Day 69, May 24 – Who Will Survive?

This will be our last “Covid Diaries” post.

Where we go from here, no one knows, least of all the person typing these words.

Life is returning to normal in Las Vegas; restaurants are re-opening; and we’ve spent the last two weeks plowing through a bunch of them.

And by “plowing through them” we mean spending beaucoup bucks in support thereof.

As of today, the Strip and all major hotels remain closed, so downtown and the neighborhoods have been where we’ve concentrated. Even when it opens, most hotels will be running at very low occupancy rates, with only a handful of restaurants being re-booted.

The Wynncore has announced five of its venues will resume operations on May 29, but other hotels aren’t showing their cards just yet.

Steakhouses will lead the way in every hotel, with buffets nowhere to be found for the time being.

And right there, you have the beginnings of the next edition of EATING LAS VEGAS – The 52 Essential Restaurants 2020. (More on this below.)

Twice we’ve been to the Capital Grille and 7th & Carson, and the cooking at both has blown us away. Even those serving truncated menus in smaller dining rooms are working extra hard. Don’t think for one second that every restaurant in town won’t be busting its ass for months to come, whether it’s a creperie, a Middle Eastern standard, or high-falutin’ gastopub,

You’ll see the same thing on the Strip when it reopens. Every cook, every waiter, every bottle-washer will be on their game. They’re in survival mode now and they know it, and the only way to prevail is to impress every customer so much they will want to come back — and dazzle them so much they’ll tell all their friends to go there — even if everyone looks pretty ridiculous in all those masks.

So, you might say in some perverse way that this shutdown will be a boon for restaurant goers.

But it won’t be for restaurant writers.

With the end of phoning it in (Hello, Giada!), indifferent cooking, and poor service (at least for the time being) comes the lack of raison d’etre for a critic to be in the game.

The idea of criticizing a restaurant — even well-financed, over-hyped, under-performing Strip restaurants — will not fit the current zeitgeist of everyone hanging on for dear life.

Entire hotels are being phased out, and in the ones that remain, nothing is certain until the casinos can gauge the level of returning tourism. This could take a year…or longer.

Our gubenator thinks Las Vegas won’t get back to where it was until a vaccine can be found. Experts are saying this could be years away.

As a local, I’ve always hated going to the Strip on weekends or when huge conventions were in town, but now, the idea of wandering around Aria or Caesars Palace when it’s only 30% full seems kind of creepy.

We’re also mindful of the fact that once the shutdown began, our book became more artifact than all-encompassing.

With this in mind, we at #BeingJohnCurtas have been doing some thought experiments in our heads, trying to guess which of our 52 favorites (and others) will survive the #coronapocalypse.

So, for shits and giggles, we’re going to list all 52 of our “essential” Las Vegas restaurants, along with a rating of chances for survival (or eventual resuscitation).

Here’s how we’ve rated the restaurants:

4 **** – a cinch to reopen (or has already reopened).

3 *** – on the bubble, but corks could be popped, sooner or later.

2 ** – outlook is drearier than a Golden Corral steak.

1 * – put a fork in them, they’re done.

As always, these opinions are worth exactly what you paid for them.

Chances for survival: good to great. Downtown’s popularity and loyal customers will see to that.

China Mama

Future outlook: Rosy. Good Chinese food (even bad Chinese food) could survive a nuclear winter.

District One

This is a tougher call. How Chinatown reacts to the shrinking economy will be interesting to watch.

Small and agile, with a passionate fan base.

Another tiny gem now threatened by a looming recession/depression. All I know is I’m going to eat here as often as I can as long as Kaoru-san is cooking.

Our best Lebanese restaurant hit the ground running and won’t look back.

Marche Bacchus

Even with its new table-spacing, none of the charm has been lost and some has been gained (see above).

Lamaii

Incendiary Thai + killer wine list = a long list of food and wine professionals who treat this place like a private club.

Lotus of Siam

Will they re-open both locations or just one? Either way, they’ll be packed.

Mordeo Boutique Wine Bar

Was on its way to becoming a must-stop for serious winos and foodies. Can it re-capture its mojo?

Ohlala French Bistro

Another tiny neighborhood gem. If the landlord cooperates, Chef Richard Terzaghi will be in great shape.

Pamplona Cocktails & Tapas

I love this place, but it’s location was challenging even during a boom economy.

Partage

The well-spaced tables and booths here will need very little adjustment to comply with “social distancing” regulations. The food needs no improvement.

Pizzeria Monzù

Believe it or not, it’s better than ever.

Other Mama

An industry watering hole that has succeeded against all odds. For that reason alone, I’m not worried about it.

Raku & Sweets Raku

Like Lotus, one of our most famous restaurants. It’s worldwide reputation and customers constantly clamoring for a table will sustain it.

Sparrow + Wolf

Brian Howard is set to re-open as we type this — how he re-sets his menu will be most interesting to watch

The Black Sheep

Jamie Tran has a small, nimble restaurant with a minuscule kitchen, and a large following. But the location gives us pause. Fingers are crossed.

Weera Thai Kitchen

Won’t miss a beat.

Here’s where things get trickier. Timing, tourists, and multiple tabulations control the fate of (most of) these places. Being on the cusp of summer doesn’t help matters, either. My guess is that each has a strong enough following (and is a critical part of a hotel’s F&B program) not to be considered a good candidate for reopening sooner than later.

Cipriani

Management has told us they may not reopen until after Labor Day. This might be a smart move since summertime is bargain-hunting-time in Vegas, and the Cipriani brand does not appeal to the 2-for-1 crowd.

CUT

Steakhouses will lead the way when high-end restaurants re-open, and there’s not a more famous one in town.

Bardot Brasserie

Aria will no doubt cut back on its strong lineup of top-shelf eateries; either Carbone or Bardot will get the boot, and we’re betting it will be the former.

Bazaar Meat

Along with CUT, our most famous steakhouse. Between the re-branding of the Sahara and the re-booting of everything, it’s bounty of beef and seafood may not fit the current mood. Personally, I wish it would re-locate to a hotel more befitting its brand and quality.

Jaleo

Jaleo is a big, multi-faceted, expensive operation. What might save it is a flexible menu which appeals to multiple price points. Plus, José Andrés may be the only surviving celebrity chef with a big following when this is all over. Several sources have told us “Julian Serrano” (its tapas competition in the Aria) has pitched its last paella.

Le Cirque

The Bellagio without Le Cirque is like Disneyland without the mouse.

Spago

The location alone will keep it alive.

Rooster Boy Cafe

Such a gem. So tiny. So perfect. My fear is Sonia El-Nawal may find catering more profitable than table service. And who could blame her?

Yui Edomae Sushi

My favorite sushi spot. Waiting with bated breath for them to start slicing again.

Expensive French bistro in this climate? I just don’t see it happening, but god I hope I’m wrong.

The aspirational, 30- and 40-somethings who have coveted a reservation here for nine years are the same ninnies who are cowering in fear of coronavirus. Having to sit within three feet of fellow diners is the type of stress their snowflake brains can’t handle.

Estiatorio Milos

I’m hearing rumors they might be moving. I’m not hearing anything about The Cosmo’s re-opening plans. Neither is a good sign.

The seating is naturally “social-distanced” (at least in the booths), but Dan Krohmer’s going to have his hands full with Other Mama.

L’Atelier de Joel Robuchon

Again….high end French comes back? I just don’t see it.

Matteo’s Ristorante Italiano

A real sleeper in the Venetian that serves incredible pasta. Having to compete with 40 other restaurants (6 of which are Italian) might be too much to ask.

Will top-notch hotels need multiple “fine dining” venues? My heart wants MM to stay, but my head tells me his restaurant group is in for a thinning.

My hearts weeps for each of these uncertain futures, and I hope I am wrong about all of them.

No matter who opens, the reopening will be the easy part. Staying open in a depressed economy is going to be the real struggle, and who is still in business a year from now is anyone’s guess.

One thing is certain though: there won’t be any new restaurants opening on the Strip for many, many months to come. You have a better chance of catching me at a Garth Brooks concert than you will of seeing any new concepts springing up in 2020.

Which brings us back to our book. If we do one, it’ll be probably be so stuffed with neighborhood eateries that it’ll be more useful as a local’s guide than something for tourists.  At this point, that might be its final legacy.

Anything we can do to help the restaurant industry bounce back from this idiotic, force-fed oblivion, the better. And if that means forgetting about the big hotels until they’ve had time to re-adjust, that’s what we’ll do.

I don’t know if our local food scene can sustain itself without all those Strip dollars being pumped into our economy, but we’re about to find out.

Life was so much easier when all we had to do was compare the Dover sole presentations.

Downtown Dining is Now a Destination

Downtown has become a gastronomic destination in its own right.

Five years ago I would’ve called you crazy if you uttered those words. But things have been booming, as drinking and dining options continue to expand, and everything from wine bars to wood-fired pizzas are on the horizon.

Main Street (aka the 18b Arts District) and East Fremont Street are the epicenters of this epicurean revolution, and though bleak some surroundings may be, once you duck inside any of these eateries, you will find delightful meals, and hand-tooled food aplenty.

I eat out in downtown Las Vegas more than anyone. Ever. (No brag just fact.) Morning, noon and night I patrol these concrete canyons scouting the best places to sooth my savage hunger, and seeking to send you serenely to the most satisfying sustenance. Here’s where you should be supping and slurping right now, but be advised, more superior comestibles are soon to surface.

Bajamar Seafood & Tacos

Good Mexican food used to be harder to find downtown than a slot junkie with good credit. These straight-from-Baja tacos (above) immediately changed that. Ignore the surroundings and dive in.

Casa Don Juan

An old reliable with a large menu and a huge following. The tortillas and the carnitas and the great service keep us coming back.

Carson Kitchen

CK started the downtown dining revolution five years ago and is still going strong. Those veal meatballs, oxtail risotto, and glazed donut bread pudding never get old.

DE Thai Kitchen

Forget the regular menu and order off the (not so) secret menu on the chalk board. If there’s a better Kua Gling (spicy ground pork) or soft shell crabs in town, I haven’t found them.

Nothing more than a counter, some deck ovens, and an assortment of the best slices in Vegas (above). Soon to open a full-service pizza restaurant in the Arts District, much to the rejoicing of pizza mavens everywhere. The pepperoni slice (above) absolutely slays the competition.

The drinks here are so good they make me wish I was an alcoholic. A booze-absorbing menu of (mostly) Jamaican food is just the thing after a few of them.

La Monja (The Nun)

This is one fun nun. An indoor-outdoor vibe (at the top of the page) that threatens to do for East Fremont Street what Esther’s did for the Arts District: bring a modern twist to a hoary formula. In this case, by giving ceviches, taquitos, and fish tacos the upgrade they deserve. Everything is under twenty bucks, and the patio has “destination drinking” written all over it.

Ocha Thai

A family-run oasis of good Thai cooking for decades.

The odds are against Old Soul, but Natalie Young’s food — like the meatloaf above — is so good we don’t care. Take the time to find it and you’ll fall in love.

Oscar Goodman is an iconic figure in Las Vegas. His steakhouse doesn’t quite match his out-sized reputation, but new chef Ben Jenkins is on a mission to change that.

As tasty as things have gotten downtown, it bears mentioning that this entire renaissance has occurred because restaurant owners, chefs and developers finally decided to ignore Fremont Street altogether.

Those of us of a certain age remember all the teeth-gnashing in the 90s and early aughts about how to “revive” Fremont Street….as if that collection of sad, shitty hotels and their slacker/slob customers were the key to downtown’s revival. They weren’t and aren’t. Leave them to their lame-ass beers and souvenirs.

No one under that atrocious canopy gives a crap about spending money. All they want is Vegas on the cheap. Gawking at those stupid light shows and naked street performers is the Las Vegas they deserve.

The good stuff is for the rest of us. All you have to do is walk a few blocks east, or a half a mile south to taste it.

2007-2017: A Decade of Restaurants

2007-2017: IT WAS THE BEST OF TIMES, IT WAS THE WORST OF TIMES…

Ten years is a long time. In restaurant years it’s practically a lifetime. Restaurants age in dog years, and those who make it to a decade are approaching retirement, especially in Las Vegas. With luck, they may continue to glide along deep into old age like those fortunate souls lucky enough to be alive and kicking into their nineties. More likely, the grim reaper will come for them soon enough.

2007 seems like an eternity ago to many of us. If you remember, it was the last “boom year” before the big bust of 2008. Ten years ago, social media wasn’t a ‘thing,” Facebook and Twitter were just gaining traction with grown-ups, and Instagram was years away from becoming the app that launched a trillion food pics. In 2007, no restaurant had its own Facebook page, no one knew what Yelp was, and if you wanted to know what your meal might look like at a Strip hotel, you had to buy a guidebook, or find a review in a magazine or newspaper. If you were lucky, that review might include a single shot of the interior and perhaps a couple of photos of featured dishes.

In 2007 there were only a few people in America taking pictures of their food, and a lot of people watching us do it, (including my then 83-now-93 year-old mother) thought we were nuts.

A decade ago, two of the best restaurants in town were ALEX and Bartolotta Ristorante di Mare in the Wynn Hotel. Rosemary’s was firmly ensconced as our most popular off-Strip eatery, and Bradley Ogden (the man and the restaurant) and Valentino were still basking in the glow of their James Beard awards from 2002 and 2004. Boulud Brasserie (also in the Wynn) was as fabulously French as you could get, Circo rang all of our Tuscan chimes at the Bellagio, and Hubert Keller was wowing us with his Alsatian-California cuisine at Fleur de Lys in the Mandalay Bay — at the time perhaps the prettiest dining room in town.

There was no downtown dining scene in 2007; there was barely a downtown drinking scene. No one knew what xiao long bao (Chinese soup dumplings) were, and high-toned Japanese cooking (like Raku, Yui, Kabuto, Yuzu Kaiseki among others) was unheard of. Food trucks were still called “roach coaches,” and were looked upon with disdain by anyone with a taste bud in their head (or more than $5 in their wallet).  Everyone was living high off the hog ten years ago, employment was full, the restaurants were even fuller, and the whole world wanted a slice of the Vegas food and beverage pie.

REALITY BITES

Then, reality set in. Faster than you could say “credit default swaps” people stopped coming. Restaurants cut back hours, high rollers and conventioneers stopped blowing a house payment on dinner, and lay-offs were everywhere. Out-of-work chefs either left town or started food trucks; big hotels like Wynn started unloading high-priced talent; and by 2013 all of those restaurants mentioned above had closed their doors. For the next five years (2009-2013), it was the serious doldrums.

There were some stalwarts who stemmed the tide, to be sure. Even the Great Recession couldn’t blunt the enthusiasm for CUT and Carnevino (both of which opened in 2008). and their success in the most dire of times proved the axiom that every restaurant in Las Vegas secretly wishes it was a steakhouse. The support of a big hotels helped the Aria (December, 2009) and The Cosmopolitan (December, 2010) lineups to remain afloat, but a mom-and-pop operation like Rosemary’s (which saw its gross revenues cut in half from 2008-2011), was a dead man sinking from the moment Bear Stearns drowned itself in debt.

Through it all, some places prevailed. Marche Bacchus actually grew in popularity after 2007, thanks to new owners (Rhonda and Jeff Wyatt) and its lakeside venue providing a welcome respite from all the financial gloom and doom hanging over the suburbs. The aforementioned Raku opened in January 2008, and immediately tapped into the smaller-is-better zeitgeist of the times. In the process, it kick-started a Chinatown renaissance that has continued unabated for the past nine years.

The Chinatown as we know it has been around since 1995, but it wasn’t until people started pinching their pennies that they discovered the glories of izakaya eating, ramen noodles, and obscure Asian soups. Even with the economic upturn of the past few years, this enthusiasm continues to grow — now expanding to upscale sushi (Yui Edomae Sushi, Kabuto, Hiroyoshi, Yuzu Kaiseki), as well as the glories of lamian (hand-pulled Chinese noodles at Shang Artisan Noodle), high-quality Korean bbq (8oz, Hobak, Magal, Goong), and even inventive Thai (Chada Thai) and Vietnamese (District One, Le Pho). Downtown’s revival has proceeded in fits and starts, but there’s no denying that Carson Kitchen and EAT (two early pioneers now celebrating their third and fifth birthdays, respectively) are here to stay.

Some suburbs, however, have remained problematical. In the past ten years, Henderson/Green Valley has turned its back on Bread & Butter, David Clawson, and Standard & Pour (three excellent, chef-driven restaurants) and a non-franchised meal in those parts is harder to find than a pork chop at VegeNation.

As a counterweight, look to the explosion of good food in the southwest. Rainbow south of the I-215 has become its own mini-Chinatown, Andre’s and Elia Authentic Greek Taverna have both opened to great acclaim in the last year, and Other Mama, Japaneiro, Cafe Breizh, Delices Gourmands French Bakery and Cafe, Sparrow+Wolf, and Rosallie Le French Cafe,  continue to draw passionate foodies in search of the good stuff.

On the Strip, some venerable joints (Le Cirque, Twist, Picasso, Guy Savoy, L’Atelier de Joël Robuchon) just keep getting better, while newcomers like Libertine Social, re-boots like the new Blue Ribbon, and the extraordinary food at Bazaar Meat, give us hope for Vegas’s dining out future. Thankfully, the small plates thing is subsiding, as are celebrity chefs. Caesar’s Entertainment wants you to get excited about whatever licensing deal it has struck with Gordon Ramsay, Giada and Guy Fieri, but most serious foodies look at these craven exercises in marketing with a big yawn. Real food cooked by chefs who are in their restaurants is what creates a buzz these days — witness the success of Harvest by Roy Ellamar — not some branding deal that has all the authenticity of a gordita.

All of which raises the question: What keeps some places alive, through thick and thin, while other, equally worthy businesses fold their tents? Rosemary’s went under, but Grape Street Cafe kept itself afloat (and is now thriving in a new location). Circo and Valentino bit the dust but Ferraro’s and Carbone (a relative newcomer) are both flying high. Standard & Pour didn’t make it a year in Green Valley; Carson Kitchen downtown (with a similar menu) is packed day and night. Glutton closes; EAT across the street thrives. What gives?

THE PRICE OF FAILURE

I have two theories on this, one food-related, one not. The less sexy one involves real estate, contracts, and accounting — three of the most boring subjects on earth. The Strip is a numbers game pure and simple. The big hotels are dominated by a need to maximize the profitability of every inch of their real estate. Wall Street demands it; investors demand it; and the food and beverage honchos think of little else. Restaurants to them aren’t amenities like swimming pools, they’re more like fancy, big-box retail stores — something to be looked at through the prism of a cold green eye-shade.

When the lease is up (a la Valentino, Bradley Ogden, Circo et al), the focus shifts from how nice a place is to which tenant can move the most numbers through the space with the highest cover average. Sappy, romantic notions of soft dappled lights in an architecturally-perfect, Adam Tihany-designed room where you fall in love over a subtle Tuscan fish stew and Mama Egi’s ravioli with brown butter sauce means nothing to the bean counters. Exit the Maccionis, enter Lago: a restaurant with all the charm of a bus station. But it’s a crowded bus station (slinging pizzas and pastas to the nightclub crowd) and that’s all that matters. When the recession hit, that’s really all that mattered. ALEX, Circo, Fleur de Lys, Valentino, and Bradley Ogden never had a chance.

THE FOOD ABIDES

Theory number two concerns food. Specifically what sells and what doesn’t. Off the Strip, you need a hook — something to make people remember you. At Marche Bacchus it’s the outdoor dining, the wine shop, and never-fail French bistro food. (That’s three hooks. Four if you include the cheesiest, gooiest  onion soup in town.) Daniel Krohmer’s Other Mama has been a hit since its doors opened a couple of years ago, in no small part due to his Strip-quality oysters, straight-from-the-Pacific seafood, and fusion concoctions (like French toast caviar) that get your attention.

Ferraro’s has patriarch Gino at the door (and its 30-year-famous osso buco and a world-class wine list), and Raku became instantly known for its house-made tofu and tender, glazed yakitori skewers that taste like they came straight from a Shinjuku alleyway. Glutton’s only hook was its terrible name and logo. One hundred feet away, one bite of EAT’s yeasty pancakes (or dense corned beef hash), and it becomes everyone’s favorite breakfast spot.

Even on the Strip, it seems more and more like it’s the food that’s getting the attention, not the absentee chefs. Many of the celebrities that made our food famous have seen their brands diminish over the past ten years, and the big splash these days are made by the over-the-top showiness of Mr. Chow’s Peking Duck, and the table-side ministrations of Carbone.

Big and showy fits Las Vegas like a Wayne Newton leisure suit, but the places that last another decade are going to be all about what’s on the plate, not whose name is on the marquee. That’s the way it should be, and that’s where we were headed ten years ago, before the recession derailed our restaurant renaissance. Now, the downsizing is over and it’s time to get cooking.

3 favorites that bit the dust too early and why.

Circo (1998-2013) – The licensing/management deal with the Maccioni family expired after fifteen years, and with it went our only authentic Tuscan cuisine. I also think the family had had enough of Vegas. New York is their home and that’s where they all want to be, and who can blame them?

Bartolotta Ristorante di Mare (2005-2013) – Paul Bartolotta’s masterpiece was expensive to create and maintain, and fell victim to the Wynn going all-in on nightclubs and bottle service. The restaurant that took its place is but a pale imitation of what was once the best Italian seafood restaurant in America.

Bradley Ogden (2002-2012) – Caesars had a choice to make: continue with a sleek, stylish place with a world class chef and his ground-breaking American cuisine, or slap a TV star’s name (Gordon Ramsay) on a sad, huge, downmarket facsimile of an English pub. Guess which concept won?
