As your local authority on transliterations, and the former arbiter of them at the Los Angeles Times, it is dan, not don, the Cantonese word for egg. Pronounce it dah-n. Just trying to keep your readers informed. Someone has to. But I agree that the Chinese aren’t great at dessert. If they had an egg, they used it to feed a family. And sugar? Forget it.
PS-it’s also tah-t, not tot, a corruption of the French word tarte.
Ah yes….transliteration: the “art” of spelling something in a foreign language that you can’t spell in that language…
