This carbonara pizza at Settebello……contains an egg, pancetta, a light schmear of tomato sauce, very little cheese (see comments), and the best pizza crust this side of Naples (Italy, not Florida).
It may be the apotheosis of pizza.

I’m pretty sure there’s mozzarella on that pizza. I’ve only had the carbonara twice, but I think there’s mozzarella.
I recall lots of egg (and egg white), perhaps a dapple of mozz…..
….so we’ll say: very little cheese!
Not only is their pizza the best in the city, they have a very interesting, and obscure Italian beer menu. I highly recommend it to all the beer aficionados out there.
Settebello is the only pizzeria between Salt Lake City and Los Angeles that is certified by the Italian government, through the Associazione Verace Pizza Napolitana, as producing an authentic cultural export of Italy. I, too, am a fan of their crust–chewy, deeply fragrant, salty (not sweet), superficially charred. This is no mere pizza; this is addiction.
For the record, I live in San Diego and eat at Settebello twice a month (I travel to Vegas on business). It is a high point of my visits to the Valley.
