The devotion to detail at the Wynn is incredible--their walk-in cooler full of live seafood tanks is bigger than my house! (not to mention the labels on the tanks that record the temperature and salinity of the water!).

Paul Bartolatta's presentation of seafood was outstanding.  

You know you are among friends when you are standing in the basement cooridors of the Wynn, sucking the juices out of the head of a sauteed prawn that was swimming in the Mediterreanean the day before!  Delicious.</description>
